Ingredientes

  • 5 x chiles de arbol
  • 1 c. extra virgin olive oil
  • 1/2 c. red wine vinegar
  • 2 Tbsp. extra-virgin extra virgin olive oil
  • 1/2 c. minced garlic
  • 2 Tbsp. minced parsley
  • 4 x portobello mushroom stems removed
  • 1/4 c. crumbled cotija

Direcciones

  1. In medium saucepan, add in the chiles to the oil and cook slowly for 20 min. Remove from heat and steep for 2 hrs.
  2. Preheat grill to high.
  3. In large bowl, combine the vinegar, oil, garlic, and parsley. Mix well, add in the mushroom to the bowl, and marinate mushrooms for 15 min.
  4. On warm grill, cook the mushroom for 5 min on each side. Remove the mushrooms from the heat and julienne. Put the mushrooms in a bowl and toss with a little of the chile oil. Serve with cheese sprinkled on top.
  5. This recipe yields 4 servings.
