Grilled Pappadums With Spicy Lentil Dip

Ingredientes

  • 1 pkt Pappadums quartered (flavored with garlic, if possible) Peanut oil
  • 3 c. Cooked lentils
  • 1/2 c. Coarsely-minced red onion
  • 4 x Garlic cloves coarsely minced
  • 1 x Serrano pepper coarsely minced
  • 2 Tbsp. White wine vinegar
  • 2 Tbsp. Extra virgin olive oil
  • 1/4 tsp Cumin Salt to taste Freshly-grnd black pepper to taste
  • 1/4 c. Coarsely-minced cilantro

Direcciones

  1. Preheat grill.
  2. Brush each pappadums quarter with oil on both sides. Grill on each side till blistered, about 10 to 12 seconds on each side.
  3. Spicy Lentil Dip: Place lentils, onion, garlic, pepper and vinegar in the bowl of a food processor. Process till smooth. Slowly add in the extra virgin olive oil. Season with cumin, salt and pepper and pulse 3 times. Remove to a bowl and garnish with cilantro.
  4. This recipe yields 4 servings.
