Receta Grilled Peppers and Portobello Mushrooms

Today I dug out my George Foreman Grill. I decided to use it to grill the veggies for this recipe. I have had my GF grill for a few years and at first I used it all the time. Like most kitchen of the month "gadgets" as I call them, they eventually get lost in that kitchen graveyard located in the back of your kitchen cupboards. That's why I have set a goal for myself...to use all of my forgotten "gadgets." Dust them off and use them again, at least once, and then I'll decide to keep them or take them to the Goodwill. So far I have departed with my brand new, used once, large Bamboo Steamer, my Turbo Cooker, I'm still trying to figure out why I bought this (late night, As Seen On TV) and my Salad Shooter, that I never liked in the first place. I have an electric knife that I received as a wedding present, when I got married to my first husband, 37 years ago.....time to say good-bye to that and an electric knife sharpener, called Handy Hannah.......still a mystery to me where this came from. I'm pretty sure this Handy Hannah is as old as I am:) lol

*As I said, I used my GF grill to make the veggies for this recipe but.... it didn't convince me to hang on to it......off to the Goodwill it went. (Sorry George) This recipe can easily be made in any frying pan or outside on a gas grill. Served with Jasmine rice, this recipe made a wonderful and tasty lunch.

Next: An Indoor Smoker!!*

Heat grill until hot. Drizzle mushroom caps, peppers and shallots with oil. Sprinkle with seasoning mix. Grill veggies until fork tender. Prepare jasmine rice according to package directions, serve with veggies.

*Note: I have nothing against the George Foreman Grill, Bamboo Steamers, Turbo Cooker, Salad Shooters, or any other small gadgets. I love "gadgets," in fact over the years I have bought many, many, many of them but I believe if I can't or don't use something, maybe someone else can:)*

Healthy Note: Try using whole grains in all your baking. Whole Wheat flour can be substituted for up to half of the all-purpose flour in most recipes.
