Grilled Polenta and Eggs
- What a wonderful way to use up left-over Polenta! Try this for an early morning breakfast or a late night snack:)
- 4 squares polenta Basic Polenta
- 4 eggs
- olive oil
Cut polenta into squares. Brush tops with olive oil. Heat a large skillet or stove top grill. Lay polenta slices, top side down and cook until nicely browned and crisp, about 10 minutes. Flip and brown the other side. Set aside and keep warm. Fry eggs sunny side up in olive oil. Place 2 squares of grilled polenta on each serving plate, top with 2 eggs. Make 2 servings.
