Grilled Potato Wedges with Smoked Paprika Dressing

Warm grilled potato wedges served with a smokey paprika ,black pepper and lemon dressing !

Ingredientes

  • 4 Large Yukon gold potatos par cooked and sliced into large wedges
  • Canola oil for brushing
  • Kosher salt and black pepper
  • 1/4 C Mayonnaise
  • 2 Tbl Dijon mustard
  • 2 Tbl Sherry vinegar
  • Juice from 2 grilled lemons
  • 1/4 C Extra virgin olive oil
  • 2 Tbl Smoked Paprika
  • Handful of fresh flat leaf parsley for garnishing

Direcciones

  1. Preheat a charcoal or gas grill to high heat
  2. Grill the lemon halves and set aside for the dressing
  3. Brush the potato wedges with the oil and sprinkle with salt and pepper
  4. Grill until lightly charred and cooked through about 2 -3 minutes per side
  5. While the potatoes are grilling whisk together the mayonnaise , mustard , sherry vinegar and juice from the grilled lemons
  6. Whisk in the olive oil and season with salt and a generous amount of black pepper
  7. Pull the potatoes from the grill and place on a platter
  8. Dust the top of the potatoes with the smoked paprika
  9. Drizzle the dressing over the potatoes and garnish with the parsley
