Grilled Prawns With Lemon Grass And Basil Butter

Ingredientes

  • 12 x tiger or possibly large prawns in their shells extra virgin olive oil
  • 2 stalk lemon grass
  • 1 lrg handful of basil leaves about 30
  • 100 gm butter
  • 1 x juice of a lemon

Direcciones

  1. Thread the prawns on to skewers that will make them easier to turn.
  2. Brush them with extra virgin olive oil.
  3. Slice the lemon grass into thin shreds and tear the basil leaves into small pcs.
  4. Mix the two together and add in them to the butter.
  5. Season with a little salt then leave to soften and heat in a small saucepan over a low heat.
  6. Grill the prawns for 23 min on each side.
  7. To serve add in the lemon juice to the butter.
  8. Dip the prawns in the melted butter scooping up a few basil leaves as you do so peeling and dipping as you go.
  9. Serves 2
