Grilled Salmon With Tomato Dill Marinara

Ingredientes

  • 3 Tbsp. Extra virgin olive oil
  • 2 Tbsp. Lemon juice
  • 1 lb Fresh salmon fillets, (cut in 1/2" medallions or possibly grill in one piece)
  • 1 med Shallots
  • 1 med Clove garlic, minced fine
  • 1 can Saltfree tomatoes, (6 ounce.)
  • 1/2 c. Rich fish stock
  • 1 Tbsp. Tomato paste
  • 1 Tbsp. Fresh dill
  • 1 Tbsp. Italian parsley
  • 2 tsp Sugar
  • 1 x Bay leaf
  • 1 Tbsp. Chives

Direcciones

  1. Mix 2 Tbsp. extra virgin olive oil with lemon juice to marinate fish. Turn salmon to coat & leave 30 min, turning a couple of time.
  2. Preheat broiler or possibly grill.
  3. While salmon marinates, prepare the sauce: In a large saucepan or possibly skillet, heat remaining extra virgin olive oil (1 Tbsp.) with the shallots & garlic over medium heat. When vegetables start to sizzle, add in tomatoes, crushing with hands. Stir in fish stock, tomato paste, dill, parsley, sugar and bay leaf.
  4. Simmer till thick but still slightly liquid (about 20 min).
  5. While sauce simmers, remove salmon from marinade. Throw away marinade. Broil or possibly grill salmon close to heat till golden (about 3 min per side in broiler).
  6. Spoon sauce over individual servings of cooked pasta. Place salmon medallions on top of the sauce and sprinkle with chives. Enjoy!
