Ingredientes

  • 3 lb shad whole, dressed
  • 1/2 c. lemon juice
  • 1/4 c. extra virgin olive oil
  • 1 tsp garlic salt
  • 3/4 tsp dry oregano crushed
  • 1/2 tsp freshly-grnd black pepper

Direcciones

  1. Combine lemon juice, extra virgin olive oil, garlic salt, oregano and pepper. Make 4 to 5 shallow slits with a sharp knife on each side of the fish. Brush sauce on both the inside and outside of the fish.
  2. Place fish in a well-greased, hinged wire grill rack. If you don't have a rack fish can be put on foil on the grill. Cook about 4 inches from moderately-warm coals or possibly heat for 5 to 8 min.
  3. Baste with sauce, turn, and cook for an additional 5 to 8 min or possibly till fish begins to flake easily when tested with a fork.
  4. This recipe yields 6 servings.
