Ingredientes

  • 4 x Soft-shell crabs, cleaned
  • 1 Tbsp. Extra virgin olive oil Salt and freshly grnd pepper
  • 4 x Sandwich rolls
  • 1/4 c. Green Chile Aioli Mixed greens Tomato slices
  • 1 c. Good quality mayonnaise
  • 1 tsp Chopped fresh garlic
  • 1 x Poblano chile, grilled, peeled and seeded
  • 2 Tbsp. Fresh lime juice Salt and freshly grnd pepper

Direcciones

  1. Prepare a wood or possibly charcoal grill and allow it to burn down to the embers.
  2. Brush crabs lightly with extra virgin olive oil and season to taste with salt and pepper. Grill for 2 1/2 min on each side.
  3. For each sandwich, place crab on one half of the roll top with mixed greens, tomato slices and Green Chile Aioli.
  4. Green Chile Aioli: Combine all ingredients in the food processor and process till the poblano is pureed. Season to taste with salt and freshly grnd pepper.
  5. Yield: about 1 c.
