Ingredientes

  • 2 lb uncooked large shrimp shelled, cleaned Fresh pineapple cut 1" chunks
  • 1 lrg onion cubed
  • 1 c. pineapple juice
  • 1/4 c. extra virgin olive oil Juice of 2 fresh limes Fresh dill Salt to taste Freshly-grnd black pepper to taste
  • 1/2 c. Southern Comfort
  • 2 c. orange marmalade
  • 1/2 c. pineapple juice
  • 2 tsp warm sauce
  • 1 Tbsp. chopped jalapeno pepper
  • 1 tsp finely-chopped fresh ginger Juice of 2 fresh lemons
  • 1/2 tsp salt
  • 1/4 tsp freshly-grnd black pepper

Direcciones

  1. Place shrimp in marinade and leave for at least 1/2 hour.
  2. Alternate shrimp on skewers with chunks of fresh pineapple and cubed onion. Grill till the shrimp turns pink and is hard to the touch.
  3. Sauce: Combine all ingredients. Hot sauce over medium heat; cold prior to serving. (May be prepared in advance and refrigerated.)
