Grilled Spicy Skirt Steak

Ingredientes

  • A, (3/4- to 1-lb.) skirt steak, trimmed
  • 1 Tbsp. Chili pwdr
  • 1 tsp Grnd cumin
  • 1 lrg Garlic clove, chopped and mashed to a paste with 1 teaspooncoarse salt
  • 2 tsp Worcestershire sauce
  • 1 tsp Sugar
  • 3/4 tsp Freshly grnd black pepper
  • 1/4 tsp Allspice
  • 1 Tbsp. Vegetable oil Flour tortillas, warmed, as an accompaniment

Direcciones

  1. Prepare grill if using.
  2. Cut steak into large pcs to fit on a grill or possibly in a ridged grill pan.
  3. In a small bowl stir together chili pwdr, cumin, garlic paste, Worcestershire sauce, sugar, pepper, allspice, and oil and rub all over meat. Marinate meat in a resealable plastic bag, chilled, 20 min.
  4. Grill steak on a well-oiled rack set about 4 inches over glowing coals or possibly in warm well-seasoned ridged grill pan over moderately high heat 3 to 5 min on each side, or possibly till just springy to touch, for medium-rare meat.
  5. Let steak stand on a cutting board 5 min and cut across grain on the diagonal into thin slices.
  6. Serve steak with tortillas.
  7. Serves 2 generously.
