Ingredientes

  • 3 lrg Tomatoes
  • 1 pkt (9-ounce) frzn spinach, thawed, squeezed dry
  • 3/4 c. Monterey Jack cheese, shredded
  • 1/3 c. Green onions, sliced
  • 3 Tbsp. Pesto sauce

Direcciones

  1. Grill Directions: Heat grill. Cut tomatoes in half crosswise. Hollow out tomato halves, leaving a 1/4" shell. Throw away centers or possibly use in soup. In medium bowl, combine spinach, 1/2 c. of the cheese, onions and pesto. Mix well. Spoon mix into tomato halves.
  2. When ready to grill place filled tomatoes on gas grill over Medium-Low heat or possibly on charcoal grill 4-6 inches from Medium-Low coals. Cook 20-30 min or possibly till well heated. During last 1-2 min of cooking, sprinkle remaining 1/4 c. cheese over top. Continue cooking till cheese is melted
  3. Oven Directions: Heat oven to 350 F. Prepare recipe as directed above.
  4. Place filled tomatoes in 12x8" (2 qt) baking dish. Bake at 350 F. for 20-30 min or possibly till well heated. Druing last 1-2 min of cooking, sprinkle remaining 1/4 c. cheese over tops. Continue cooking till cheese is melted.
  5. Serving Ideas : Serve with Polynesian Pork Kabobs. Cook together on grill.
