Before I talk about this grilled steakhouse steak tip recipe, let me jump in and say that this is one of the best grilled steak recipes I've ever had! Best of all, the marinade wasn't too fussy to make, and the grilling process/time was super quick. Win! Believe me, you will want to make this. Stat.

,%20but%20the%20butcher%20convinced%20Craig%20that%20it's%20pretty%20much%20the%20same%20thing.%20%20Now,%20what%20do%20I%20do?%20Risk%20it%20or...%3C/p%3E%3Cp%3EAs%20luck%20would%20have%20it,%20our%20DVR%20recorded%20an%20episode%20on%20Cook's%20Country%20for%20Grilled%20Steakhouse%20Steak%20Tips.%20Have%20you%20ever%20heard%20of%20steak%20tips%20before?%20Well,%20neither%20had%20I.%20Typically,%20steak%20tips%20come%20from%20the%20bottom%20sirloin,%20and%20that%20is%20where%20flap%20meat%20comes%20from.%3C/p%3E%3Cp%3EThe%20steak%20was%20long%20and%20thin,%20similar%20to%20skirt%20steak.%20The%20fatty%20side%20isn't%20pretty%20to%20look%20at,%20but%20the%20scientific%20recommendation%20is%20to%20poke%20holes%20in%20it%20to%20break%20up%20the%20fibrous%20tissues.%3C/p%3E%3Cp%3ENext,%20the%20meat%20is%20sliced%20into%20roughly%202%22%20chunks,%20because%20it%20needs%20to%20be%20marinated%20for%20at%20least%202%20hours,%20and%20up%20to%2024%20hours.%3C/p%3E%3Cp%3EDARK%20BROWN%20SUGAR%20Delivers%20depth,%20complexity,%20and%20a%20caramelized,%20crusty%20char.%3C/p%3E%3Cp%3EVEGETABLE%20OIL%20Distributes%20flavors%20and%20activates%20oil-soluble%20flavor%20compounds,%20such%20as%20those%20found%20in%20garlic.%3C/p%3E%3Cp%3ESOY%20SAUCE%20Its%20salt%20penetrates%20to%20deeply%20season%20the%20meat.%20Its%20glutamates%20boost%20meaty%20flavor.%3C/p%3E%3Cp%3ETOMATO%20PASTE%20Adds%20background%20savor%20and%20enough%20body%20to%20help%20the%20marinade%20cling.%3C/p%3E%3Cp%3EOnce%20I%20made%20the%20marinade,%20one%20whiff%20told%20me%20this%20was%20going%20to%20be%20good!%3C/p%3E%3Cp%3EWe%20own%20both%20a%20Weber%20charcoal%20grill%20and%20a%20gas%20grill.%20This%20time,%20we%20decided%20to%20use%20the%20gas%20grill--%20which%20Craig%20heated%20on%20high%20for%2015%20minutes%20(cover%20closed),%20and%20then%20brushed%20off%20to%20make%20sure%20that%20it's%20nice%20and%20clean.%20We've%20adopted%20the%20Cook's%20Illustrated/America's%20Test%20Kitchen%20way%20of%20oiling%20the%20grate,%20by%20dipping%20a%20folded%20paper%20towel%20%20into%20a%20bowl%20of%20vegetable%20oil.%20%20This%20works%20great,%20to%20prevent%20food%20from%20sticking.%3C/p%3E%3Cp%3ESo,%20now%20it's%20time%20to%20slap%20these%20on%20the%20grill.%3C/p%3E%3Cp%3EIt's%20a%20challenge%20to%20photograph%20meat,%20when%20the%20grill%20is%20hot%20and%20there's%20lots%20of%20smoke%20coming%20out.%20This%20steak%20will%20cook%20very%20fast,%20so%20we%20have%20to%20work%20fast.%3C/p%3E%3Cp%3ECraig%20flipped%20these%20over%20at%20about%204%20minutes,%20and%20the%20caramelization%20of%20the%20meat%20looks%20glorious!%3C/p%3E%3Cp%3EYou'll%20want%20to%20cook%20the%20steaks%20until%20it%20reaches%20between%20130-135F.%20%20I%20learned%20that%20flap%20meat%20shouldn't%20be%20cooked%20to%20rare,%20or%20it'll%20be%20tough.%20%20The%20higher%20temperature%20allows%20the%20fibers%20to%20break%20down%20enough%20to%20yield%20a%20tender%20steak.%20At%20least,%20that's%20what%20I%20hoped%20would%20be%20true.%3C/p%3E%3Cp%3EIt's%20important%20to%20tent%20the%20grilled%20meat,%20loosely,%20with%20foil%20and%20let%20it%20sit%20for%20five%20minutes.%20%20NOTE:%20I%20was%20ravenous%20by%20this%20time!%3C/p%3E%3Cp%3ECraig%20was%20still%20grilling%20our%20fresh%20corn,%20and%20I%20just%20couldn't%20stand%20the%20wait%20any%20longer.%20I%20had%20to%20cut%20into%20a%20piece%20of%20steak,%20to%20see%20if%20it%20was%20overcooked%20and%20I%20was%20anxious%20for%20a%20taste.%20%20As%20you%20can%20see,%20the%20meat%20is%20very%20juicy%20and%20it's%20not%20overcooked.%20%20It's%20just%20right!%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20The%20overall%20flavor%20of%20this%20steak%20made%20the%20eyes%20roll%20to%20the%20back%20of%20my%20head.%20I%20did%20that%20%22food%20groan%22%20sound%20and%20did%20a%20little%20dance.%20%20The%20marinade%20has%20notes%20of%20a%20mild%20teriyaki%20flavor--%20minus%20the%20ginger.%20%20I%20used%20reduced-sodium%20soy%20sauce,%20and%20the%20steak%20had%20just%20the%20perfect%20amount%20of%20seasoning.%20I%20had%20cut%20back%20on%20the%20paprika%20a%20bit,%20afraid%20it%20might%20overpower%20the%20steak,%20and%20cut%20back%20on%20the%20cayenne%20pepper--%20because%20my%20taste%20buds%20are%20sensitive%20to%20heat.%20%20The%20marinade%20was%20perfection!%3C/p%3E%3Cp%3EAs%20for%20the%20steak--%20it%20was%20really%20tender.%20I%20was%20really%20surprised,%20and%20grateful,%20that%20the%20meat%20wasn't%20chewy.%20%20I%20liked%20that%20these%20were%20small%20pieces,%20so%20I%20wouldn't%20overindulge.%20I%20was%20tempted%20to%20eat%20more%20than%20three%20pieces,%20but%20I%20focused%20on%20my%20salad%20and%20fresh%20grilled%20corn,%20as%20well.%20%20The%20next%20time%20we%20have%20a%20BBQ,%20with%20guests,%20I%20know%20that%20a%20platter%20of%20these%20will%20be%20a%20welcome%20addition%20with%20our%20BBQ%20ribs%20and%20Spatchcock%20Chicken.%3C/p%3E%3Cp%3EWe%20only%20grilled%20half%20the%20meat,%20and%20tonight--%20we're%20polishing%20off%20the%20second%20half%20along%20wi
