Receta Grilled Stuffed Avocado Caprese

Some people think avocados are high in fat and they are. On average, an avocado contains about 24g of fat, which has given them a bad reputation; especially to the low fat obsessed. Don’t let the fat content scare you, most of the fat in an avocado is mono-unsaturated fat, aka the good fat. Mono-unsaturated fats are essential for brain development and they also help the body to absorb other nutrients just like the ones that are abundant in avocados. Monounsaturated fats also contribute to lowering blood pressure. So skip that piece of cheese and have a slice of avocado instead.
Even though the most common way to eat an avocado is cold, they are really awesome when they are heated. I add them to a grilled cheese sandwich; I use a very small amount of cheese and lots of creamy and delicious avocado so I can have more of the good fat, and less of the bad fat.
In this recipe, I slice the avocados in half, grill and stuff them with a mixture of tomatoes, basil and garlic. The creaminess of the avocado fills in for the cheese quite nicely, and is perfect for a quick lunch or a dinner side.
Grilled Stuffed Avocado
Ingredients
- 2 avocados
- 1 pint of cherry tomatoes - chopped
- 1/4 to 1/2 cup fresh basil
- 1 tablespoon olive oil
- 2-3 cloves of crushed garlic - to taste
Instructions
Pre-heat the grill to a medium heat setting
slice the avocados in half lengthwise and remove the pit
place the avocado halves on the grill flesh side down on the grill grates
grill the halves for about 10 to 15 minutes until the flesh heats up and begins to soften
while the avocados are on the grill
combine the tomatoes, garlic, oil and basil in a bowl and set aside
Once avocados are ready, remove from grill and turn over so that the flesh side is facing up
Fill each avocado with tomato basil mixture
