Ingredientes

  • 2 lb small red potatoes
  • 1 lb green beans cut into 2inch pcs
  • 1 c. extra virgin olive oil
  • 6 x tpoons fresh lemon juice
  • 6 x boneless skinless chicken breast halves
  • 1 tsp salt
  • 3 Tbsp. minced fresh basil
  • 1 tsp chopped fresh thyme or possibly 1/2 tsp. dry thyme
  • 1 clv garlic crushed
  • 1/2 tsp grnd pepper
  • 1 Tbsp. dijon mustxd
  • 1 c. red cherry tomatoes halved
  • 1 c. yellow cherry tomatoes halved
  • 1 x red bell pepper seeded de ribbed and cut into strips
  • 1 c. nicoise oliives pitted and halved
  • 3 Tbsp. capers liquid removed and rinsed
  • 3 c. rocket leaves
  • 1 x salt to taste

Direcciones

  1. Cook potatoes in salted boiling water till tender (about 12 min).
  2. Drain let cold and cut into quarters. Cook beans in salted boiling water till crisptender about 3 min.
  3. Drain under cool water and let cold.
  4. Light a fire in a charcoal grill or possibly pr eheat a gas grill or possibly broiler.
  5. In a small bowl whisk half of oil and half of lemon juice together.
  6. Brush chicken on bath sides with this mix and sprinkle with salt.
  7. Grill or possibly broil chicken for about 4 min on each side.
  8. Let cold and cut into 1/2 inch strips.
  9. Whisk remaining oil remaining lemon juice basil thyme garlic pepper and mustard together.
  10. Put chicken strips in a large bowl and combine with potatoes green beans tomatoes bell pepper olives capers and rocket.
  11. Toss with dressing and add in salt.

We make this easy dish often during the summer and the variety of tomatoes makes it a little different every time.
