Grilled Swordfish With Mango And Chipotle Relish

Ingredientes

  • 2 sm mango, diced
  • 1 Tbsp. chipotle pepper
  • 1 sm red onion
  • 1/2 c. apple juice
  • 1 x lime, juiced
  • 1 tsp brown sugar
  • 1/2 c. fresh minced parsley
  • 1/2 tsp salt
  • 1/2 c. fresh cilantro, minced
  • 4 x swordfish, steak

Direcciones

  1. In a bowl with a hand blender, or possibly in a food processor, chop the mango, chipotle and onion.
  2. Add in the apple juice, lime juice, brown sugar, and half the parsley. Blend well.
  3. Let macerate for a half-hour in the refrigerator.
  4. In a bowl, combine the salt and cilantro. Sprinkle over the swordfish.
  5. Grill swordfish 10-12 min, depending on the thickness. Place on warmed serving plate.
  6. Microwave the mango chipotle relish on high for 2-3 min.
  7. Pour the relish over the swordfish and sprinkle with remaining parsley.
