Receta Grilled Tofu Kabobs

If you are looking for something light and easy to grill up this week, look no further. Tofu is a quick, easy and healthy alternative to meat. I was able to put these kabobs together within 30 minutes. . .

If you are not a tofu lover you can always substitute the tofu for chicken, which will take a bit longer to prepare and cook.

Soy is one of the most genetically modified crops in the United States, and I highly recommend that when choosing soy products ALWAYS choose organic.

There has been some controversy over the past few years about the health benefits or lack of when it comes to soy. There doesn’t seem to be concrete evidence to prove the health benefits or risks either way. As with anything, moderation is the key.

In this recipe, I used a mix of seasonal vegetables such as zucchini, onions, tomatoes and peppers. Add your favorite vegetables or fruits and make your own kabob creation.

For the marinade

Instructions

Remove tofu from package, wrap in paper towels and top with a plate to press out the moisture for about an hour

Mix ingredients for marinade in a bowl

Remove towels from tofu and slice the block in half horizontally and cut into cubes that are about 1 1/2 inches

Add the tofu to the marinade and set aside for at least 30 minutes

Prepare the vegetables for the skewers by cutting them into bite sized pieces

After tofu has marinated,save the marinade and begin stringing the ingredients to the skewers

Brush the kabobs with the left over marinade (only do this for tofu) if using chicken set a small amount of marinade aside before adding the chicken for basting.

Place the kabobs onto a grill and grill over medium heat, turning occasionally until vegetables are cooked - about 10 to 15 minutes
