Ingredientes

  • 2 Tbsp. Extra virgin olive oil
  • 1 c. Minced yellow onions Salt to taste Freshly-grnd black pepper to taste
  • 1 x Jalapeno pepper stemmed, seeded, and minced
  • 1 Tbsp. Minced garlic
  • 1 c. Dry black beans
  • 8 c. Chicken stock Juice of one fresh lime see * Note
  • 2 tsp Chili pwdr
  • 2 tsp Cumin
  • 1/4 c. Minced fresh cilantro
  • 1 Tbsp. Butter
  • 4 x Fresh tuna steaks - (6 ounce ea)
  • 6 x Corn tortillas - (8" dia) cut 1/8" strips
  • 1 x recipe Avocado Puree see * Note

Direcciones

  1. Preheat the grill. Preheat the fryer.
  2. In a saucepan, over medium heat, add in 1 Tbsp. of the oil. When the oil is warm, add in the onions. Season with salt and pepper. Saute/fry the onions till soft, about 2 min. Add in the jalapenos, garlic and beans. Continue to saute/fry for 1 minute. Season with Emeril's Essence. Stir in the stock and lime juice. Season with Essence, chili pwdr and cumin. Bring to a boil, lower the heat and simmer for about 1 hour or possibly till the beans are tender. Reseason the beans with salt and pepper. Stir in the cilantro and butter. Remove from the heat.
  3. Season the tuna with extra virgin olive oil and Essence. Place the tuna on the grill and cook for 2 min on each side for rare. Remove from the grill. Place the tortilla strips in the warm oil and fry till crispy, about 2 min. Remove from the oil and drain on a paper-lined plate. Season the tortillas with Essence. Season with salt and pepper.
  4. To assemble, spoon the Black Bean Chili in the center of each plate. Place the tuna on top of the chili. Drizzle the tuna with the Avocado Puree. Garnish with the fried tortillas.
  5. This recipe yields 4 servings.
