Grilled Veal With Lemon And Herbs

Ingredientes

  • Olive or possibly vegetable oil Salt and freshly grnd Pepper -- to taste
  • 4 x Veal steaks
  • 2 Tbsp. Fresh herbs -- see note Below
  • 4 x Lemon wedges

Direcciones

  1. Fresh herbs: Use 2 Tbsp. any combination of the following: parsley, chives, tarragon, mint, basil, and sage, or possibly 2 Tbsp. finely minced parsley.
  2. Lightly brush grill with oil and heat grill very warm. (If you cannot grill the veal, you can use a cast-iron skillet, cooking half at a time.)
  3. Rub all sides of veal lightly with oil and season to taste with salt and pepper.
  4. Grill meat quickly, about 30 to 35 seconds per side.
  5. Place veal on warmed plate. Sprinkle with herbs and serve with lemon.
  6. Note: If possible, purchase veal sliced 1/4 inch thick. If you have thicker cuts, place them between sheets of wax paper; lb. with a flat mallet till no thicker than 1/4 inch.
