Grilled Vegetable Hummus Roll Ups

Ingredientes

  • 4 x carrots peeled, and sliced on the diagonal
  • 4 x zucchini sliced on diagonal
  • 4 x yellow squash sliced on diagonal
  • 1/4 c. balsamic vinegar
  • 1 tsp chopped garlic
  • 1 tsp dry oregano
  • 1 tsp dry basil
  • 8 whl -wheat tortillas
  • 1 c. Hummus (see recipe)

Direcciones

  1. Preheat the grill or possibly broiler. In a large bowl, toss the vegetables with the vinegar, garlic, oregano, and basil. Grill or possibly broil till browned and tender on each side. Remove.
  2. Hot the tortillas 30 seconds under the broiler or possibly wrapped in plastic in the microwave to soften.
  3. To assemble, spread 2 Tbsp. of Hummus on each tortilla. Top with 1/2 c. of the vegetables and roll up tightly. If you like, slice the rolls on the diagonal to serve.
  4. This recipe yields 8 servings.
