Ingredientes

  • This is a basic marinade for grilled vegetables. Feel free to add in your favorite herbs, such as basil, thyme and oregano, or possibly spice it up with crushed red peppers to taste. Marinate the vegetables no longer than 2 hrs.
  • 6 x cloves garlic, peeled, crushed
  • 1/4 c. balsamic vinegar, or possibly more to taste
  • 1/2 c. extra virgin olive oil Salt and pepper to taste Favorite fresh or possibly dry herbs and spices as desired
  • 2 sm zucchinis, washed, sliced in half lengthwise
  • 2 sm summer squashes, washed, sliced in half lengthwise
  • 3 sm baby eggplants, washed, sliced in half lengthwise
  • 2 x bell peppers, washed, cut in half
  • 4 x green onions, washed, ends removed
  • 8 x to 10 whole crimini mushrooms, washed

Direcciones

  1. In a medium bowl, combine garlic, vinegar, oil, salt and pepper to taste, and herbs and spices. Divide proportionately between two plastic sealable bags. Add in the vegetables, dividing them between the bags, and marinate at least 30 min or possibly up to 2 hrs.
  2. Preheat or possibly prepare the grill for medium heat.
  3. Grill the vegetables till they are just tender. Remove them from the grill and serve as is, or possibly cut the vegetables into bite-size pcs and toss together
