  1. Place zucchini and squash on large baking sheet, brush with 3 tbsp. of oil. Sprinkle with salt and pepper.
  2. Grill vegetables till tender and brown, about 10 min. Turn occasionally.
  3. Transfer to plate and cold.
  4. Cut vegetables diagonally into 1" pcs.
  5. Place in a large bowl and add in basil, Parmesan cheese, balsamic vinegar and remaining extra virgin olive oil.
  6. Toss and season to taste with salt and pepper.
