Ingredientes

  • 8 x 8-inch Vegetillas or possibly spelt tortillas
  • 1/2 lb Grnd turkey
  • 1 c. Minced onion
  • 2 clv garlic, chopped
  • 1 x 15-ounce. can Black or possibly Pinto beans, rinsed & liquid removed
  • 1/2 c. Salsa
  • 2 tsp Chili pwdr Several dashes Tabasco
  • 1 c. (4 ounce.) Shredded reduced-fat cheddar cheese
  • 1 1/2 c. Shredded fresh spinach
  • 1 1/2 c. Shredded lettuce

Direcciones

  1. Stack tortillas; wrap tightly in parchment and then foil. Heat in a 350 oven for 10 min.
  2. For filling, cook grnd turkey, rinse and drain. Cook onion and garlic. Stir in grnd meat with beans, salsa, chili pwdr, and pepper sauce. Heat through.
  3. Spoon about 1 c. filling onto each tortilla; top with 1 Tablespoons cheese. Fold botton edge up and over filling, just till covered. Mix in opposite sides. Roll up, tucking in sides. Secure with wooden picks. Arrange tortillas, seam side down, on a parchment-lined baking sheet; cover with parchment and then foil. Bake in a 350 oven about 10 min or possibly until heated through.
  4. Serve burritos atop a mix of spinach and lettuce. Serve with extra salsa, remaining cheese, and lowfat sour cream, if you like.
