%20blueberry%20goodies%20and%20tasty%20home%20grown%20tomato%20treats.%20%20Long%20live%20summer!%3C/p%3E%3Cp%3EClafoutis,%20Zucchini%20Blueberry%20Muffins,%20and%20Blender%20Gazpacho:%20Many%20Variables%20Later%3C/p%3E%3Cp%3EA%20couple%20weekends%20ago%20Heather%20came%20by%20for%20a%20long-overdue%20visit.%20I%E2%80%99d%20already%20decided%20on%20the%20insanely%20easy%20and%20explicitly%20French%20clafoutis%20[a%20fruit%20filled%20cake]%20to%20have%20for%20nibbles,%20along%20with%20some%20gazpacho%20made%20with%20our%20roof-grown%20organic%20tomatoes.%3C/p%3E%3Cp%3EI%E2%80%99ve%20made%20dozens%20of%20clafoutis%20(it%E2%80%99s%20one%20of%20my%20favorite%20sweets)%20using%20an%20equal%20number%20of%20recipes.%20Every%20time%20I%20see%20a%20clafouti%20recipe%20online%20I%20see%20it%20as%20a%20sign%20to%20Make%20Clafouti.%20It%E2%80%99s%20always%20eggs,%20flour,%20milk,%20sugar,%20and%20fruit%E2%80%A6but%20in%20varying%20proportions.%3C/p%3E%3Cp%3EFrankly,%20I%20now%20skip%20all%20recipes%20that%20call%20for%20preheating%20the%20pan%20and%20pouring%20in%20a%20thin%20layer%20of%20batter%20(sorry,%20Julia),%20letting%20it%20set%20up%20in%20the%20oven,%20and%20then%20taking%20it%20out%20to%20receive%20the%20fruit%20and%20rest%20of%20the%20batter.%20Who%20needs%20this?%3C/p%3E%3Cp%3EA%20couple%20days%20earlier%20I%E2%80%99d%20made%20this%20recipe%E2%80%93with%20half-plums%20plopped%20cut-side%20down%20before%20being%20bathed%20in%20the%20batter%E2%80%93with%20a%20gorgeous%20finish.%3C/p%3E%3Cp%3EI%20used%20the%20very%20same%20recipe%20to%20make%20a%20blueberry%20clafouti%20for%20Heather.%20And%20the%20results%20were%20just%20depressing.%20There%20are%20many%20ways%20a%20clafoutis%20can%20look%20(I%20dare%20you%20to%20check%20out%20this%20image%20gallery%20and%20not%20run%20to%20the%20fridge%20to%20see%20if%20you%20have%20enough%20eggs%20to%20make%20one),%20but%20this%20isn%E2%80%99t%20one%20of%20them.%3C/p%3E%3Cp%3EHeather%20asked%20what%20I%E2%80%99d%20done%20differently.%20Well,%20said%20I,%20I%20used%20blueberries%20instead%20of%20plums.%20And%20it%20was%20far%20more%20humid%20the%20day%20I%20baked%20the%20blueberry.%20And%20too%20late%20I%20noticed%20one%20of%20the%20burners%20on%20my%20oven%20had%20stopped%20working,%20so%20it%20wasn%E2%80%99t%20up%20to%20temperature%20when%20I%20slid%20in%20the%20pan.%3C/p%3E%3Cp%3E(Heather%20is%20doubled%20over%20with%20laughter%20at%20this%20point.)%20%E2%80%9CAnything%20else?!%E2%80%9D%20she%20squeaked%20out.%20Well,%20it%20was%20so%20hot%20outside%20and%20there%20are%20so%20many%20new%20restos%20on%20our%20block%20sucking%20power%20away%20from%20us%20that%20the%20voltage%20stream%20to%20the%20oven%20was%20compromised%20(who%20except%20my%20smart%20boyfriend%20with%20a%20voltage%20meter%20knew%20this%20could%20even%20happen?).%3C/p%3E%3Cp%3EHeidi%E2%80%99s%20Zucchini%20Blueberry%20Muffins%3C/p%3E%3Cp%3EUndaunted,%20I%E2%80%99d%20also%20whipped%20up%20a%20couple%20batches%20of%20my%20favorite%20blueberry%20muffins%20for%20the%20folks%20working%20our%20honey%20harvest%20the%20following%20day.%20I%20assure%20you%20that%20this%20recipe%20can%20withstand%20the%20vagaries%20of%20baking%20in%20an%20uncertain%20oven%E2%80%A6and%20how%20can%20I%20make%20that%20assertion?%20I%20baked%20them%20in%20the%20same%20under-heated%20oven%20(just%20longer%20than%20usual)%20as%20the%20clafoutis.%3C/p%3E%3Cp%3EThis%20altered%20recipe%20for%20zucchini%20bread%20delivers%20a%20200-calorie%20muffin%20that%20makes%20people%20want%20to%20eat%20five,%20replacing%20a%20lot%20of%20the%20high-gluten%20white%20flour%20with%20quick%20oats.%3C/p%3E%3Cp%3ERecipe%3C/p%3E%3Cp%3ETwo%20bowls%20are%20needed:%20a%20large%20bowl%20for%20the%20wet%20ingredients,%20sugar,%20and%20oats%20+%20a%20smaller%20one%20for%20the%20scant%20dry%20ingredients%20and%20blueberries.%3C/p%3E%3Cp%3EPreheat%20oven:%20375%20degrees%3C/p%3E%3Cp%3EBaking%20time:%2020%20minutes%3C/p%3E%3Cp%3EBroiler%20time:%20a%20minute%20or%20so%20to%20brown%20the%20muffin%20tops%20after%20they%E2%80%99re%20done%20baking%20(optional)%3C/p%3E%3Cp%3EUse%20a%20whisk%20to%20mix%20the%20dry%20ingredients.%20%20Then%20add%202%20heaping%20cups%20fresh%20or%20frozen%20blueberries,%20tossing%20to%20coat.%3C/p%3E%3Cp%3EMixing%20dry%20into%20wet%3C/p%3E%3Cp%3EPour%20the%20dry%20ingredients%20into%20the%20wet%20bowl%20and,%20using%20a%20rubber%20spatula,%20blend%20using%20confident,%20large%20strokes.%20The%20idea%20is%20not%20to%20thoroughly%20combine%20the%20ingredients%20(though%20if%20you%20do%20this%20the%20sky%20won%E2%80%99t%20fall),%20but%20rather%20to%20combine%20to%20a%20point%20where%20you%20still%20see%20some%20dry%20flour%20in%20the%20mix.%3C/p%3E%3Cp%3EUse%20a%20quarter-cup%20measure%20to%20fill%20the%20muffin%20tin.%20Then%20shake%20a%20little%20extra%20cinnamon%20and%20nutmeg%20onto%20the%20top%20of%20each%20muffin.%20These%20are%20not%20extremely%20sweet%20tidbits,%20so%20if%20you%20like%20sugar,%20sprinkle%20a%20little%20on%20top%20of%20each%20muffin%20for%20extra%20sweetness.%3C/p%3E%3Cp%3EBake%20@%20375%20for%2020%20minutes%20or%20until%20a%20wooden%20skewer%20comes%20out%20clean.%20Cool%20on%20a%20wire%20rack%20for%20ten%20minutes%20or%20so%20and%20then%20remove%20the%20muffins%20to%20the%20rack%20to%20cool%20completely.%3C/p%3E%3Cp%3EGazpacho%3C/p%3E%3Cp%3EMeanwhile,%20the%20Mark%20Bittman%20Gazpacho%20was%20coming%20together.%20I%20realized%20too%20late%20that%20Heather%20has%20had%20her%20issues%20with%20Bittman%20(something%20about%20a%20chocolate%20cake?),%20but%20his%20basic%20gazpacho%20is%20a%20farmers%20market%20girl%E2%80%99s%20dream.%3C/p%3E%3Cp%3EI%20had%20the%20blender%20half-full%20when%20Heather%20arrived,%20with%20extra%20cukes%20because%20I%E2%80%99d%20bought%20a%20bunch%20at%20the%20Wicker%20Park%20Farmers%20Market.%3C/p%3E%3Cp%3ENot%20in%20the%20recipe,%20but%20we%20chopped%20and%20tossed%20in%20handfuls%20of%20fresh%20basil%20from%20the%20window%20boxes%20out%20front%20and%20added%20stale%20bread%20(that%20is%20part%20of%20the%20recipe).%3C/p%3E%3Cp%3EThen%20we%20whizzed%20it%20up%20in%20the%20blender%20and%20strained%20it%20all%20through%20my%20new%20chinoise,%20a%20lovely%20gift%20from%20a%20thoughtful%20boyfriend%20(he%E2%80%99s%20not%20all%20about%20voltage%20meters).%20Adjust%20the%20sherry%20vinegar%20to%20your%20palate%E2%80%94we%20like%20a%20little%20bite.%3C/p%3E%3Cp%3ENo%20final%20photo,%20but%20this%20is%20the%20quickest%20soup%20you%E2%80%99ll%20ever%20make,%20smooth%20as%20silk.%20If%20you%20like%20a%20rougher%20soup,%20there%E2%80%99s%20no%20need%20to%20strain.%20And%E2%80%A6if%20it%E2%80%99s%20the%20dead%20of%20winter,%20using%20canned%20tomatoes%20produces%20an%20equally%20delectable%20result.%3C/p%3E){kind=link}
