%3C/p%3E%3Cp%3EPublished%20April%2023,%202014.%20Last%20updated%20July%2011,%202018%20by%20Judy%20Purcell%207%20Comments%3C/p%3E%3Cp%3EWhat%20a%20treat%20to%20introduce%20you%20all%20to%20Linda.%20We%20both%20love%20good%20food%20that%20is%20good%20for%20you%20and%20we%20know%20it%20always%20tastes%20better%20with%20family%20and%20friends.%20%20Linda%20has%20a%20knack%20for%20delicious%20biscotti%20and%20cheesecakes%E2%80%94you%E2%80%99ll%20want%20to%20check%20out%20her%20Peanut%20Butter%20Lovers%20Cheesecake.%20Her%20recipes%20have%20a%20simple%20elegance%20to%20them,%20you%20always%20feel%20welcome%20at%20her%20table.%20Stop%20by%20Savoring%20Every%20Bite%20and%20linger%20awhile,%20it%20won%E2%80%99t%20take%20long%20to%20feel%20like%20friends.%3C/p%3E%3Cp%3ECarrot%20Beet%20Cupcakes%20(Gluten%20Free)%3C/p%3E%3Cp%3EHello%20Savoring%20Today%20readers,%20I%20am%20Linda%20from%20Savoring%20Every%20Bite,%20and%20so%20very%20honored%20and%20pleased%20to%20have%20been%20asked%20by%20Judy%20to%20guest%20post.%20%20Aside%20from%20Judy%20and%20I%20both%20sharing%20our%20passion%20of%20savoring%E2%80%A6.%20days,%20bites,%20moments,%20experiences,%20life%20in%20general%E2%80%A6I%20have%20found%20that%20she%20is%20so%20similar%20a%20woman%20to%20me%20in%20her%20faith,%20love%20of%20family,%20friends%20and%20hospitality.%20%20With%20that%20inner%20driving%20force,%20I%20know%20that%20she%20will%20find%20her%20healing,%20comfort%20and%20peace%20during%20this%20season%20of%20her%20life.%20%20And%20with%20all%20of%20our%20prayers%20going%20out%20to%20her,%20I%20am%20sure%20she%20feels%20His%20presence!%3C/p%3E%3Cp%3EFor%20those%20who%20have%20followed%20Savoring%20Every%20Bite,%20I%E2%80%99ve%20been%20a%20bit%20distracted%20and%20MIA.%20%20However,%20I%20could%20not%20turn%20down%20Judy%E2%80%99s%20request%20to%20guest%20post.%20%20In%20fact,%20I%20felt%20it%20a%20blessing%20in%20disguise,%20pushing%20my%20attention%20away%20from%20my%20distractions%20to%20a%20more%20healthy%20and%20meaningful%20way%20in%20helping%20someone%20else.%20I%20didn%E2%80%99t%20initially%20realize%20how%20close%20my%20scheduled%20guest%20post%20was%20to%20Easter%20when%20I%20was%20offered%20this%20date.%20%20Again,%20how%20wonderful%20life%20just%20falls%20into%20place%20when%20you%20step%20out%20of%20your%20own%20way!%3C/p%3E%3Cp%3ESince%20I%E2%80%99ve%20been%20MIA,%20I%20have%20made%20some%20changes%20in%20my%20eating,%20though%20I%20have%20always%20ate%20healthy,%20I%E2%80%99ve%20stepped%20up%20my%20eating%20clean,%20less%20carbs%20and%20a%20very%20conscientious%20effort%20in%20following%20this%20for%20every%20meal.%20So%20as%20I%20began%20planning%20my%20Easter%20menu,%20I%20gave%20some%20serious%20thought%20to%20my%20traditional%20Carrot%20Cake%20recipe.%20The%20carrot%20cake%20recipe%20I%20have%20baked%20for%20family%20and%20friends%20since%20the%2080%E2%80%99s%20is%20overloaded%20with%20goodness.%20%20Carrots,%20crushed%20pineapple,%20golden%20raisins%20and%20walnuts.%20%20Along%20with%20white%20flour,%20oil%20and%20a%20ton%20of%20sugar!%20%20As%20I%20began%20experimenting,%20cupcakes%20seemed%20easier%20to%20taste%20test,%20plus%20I%20just%20love%20presenting%20my%20guests%20with%20a%20pretty,%20personal%20dessert.%3C/p%3E%3Cp%3EBeets%20are%20fairly%20new%20to%20me,%20it%20wasn%E2%80%99t%20a%20veggie%20my%20mother%20made%20for%20us%20and%20honestly%20I%20only%20saw%20them%20sliced%20from%20a%20can%20and%20that%20did%20not%20appeal%20to%20me%20to%20even%20try.%20%20So%20with%20this%20whole%20new%20healthy%20eating%20and%20learning%20of%20beets%20being%20one%20of%20the%20world%E2%80%99s%20healthiest,%20extremely%20nutritious%20foods,%20I%20decided%20to%20try%20incorporating%20grated%20beets%20along%20with%20the%20carrots.%3C/p%3E%3Cp%3EAs%20you%20can%20see,%20the%20beets%20turned%20the%20dough%20into%20a%20very%20pretty%20color!%20%20I%20switched%20the%20white%20flour%20to%20rice%20flour,%20initially%20concerned%20that%20rice%20flour%20has%20felt%20grainy%20to%20me%20in%20the%20past.%20%20I%20think%20with%20all%20the%20extras%20thrown%20in,%20there%20wasn%E2%80%99t%20any%20noticeable%20texture%20difference%20using%20rice%20flour.%20%20Oil%20was%20replaced%20with%20applesauce%20and%20coconut%20oil%20and%20sugar%20was%20switched%20to%20coconut%20sugar.%20%20In%20one%20batch%20I%20reduced%20the%20amount%20of%20sugar%20but%20felt%20that%20as%20these%20are%20for%20dessert%20and%20not%20a%20breakfast%20muffin,%20the%20full%20amount%20was%20needed.%3C/p%3E%3Cp%3ECarrot%20Beet%20Cupcakes%20[Gluten%20Free]%3C/p%3E%3Cp%3EAuthor:%20Linda%20@%20Savoring%20Every%20Bite%3C/p%3E%3Cp%3EPrep%20Time:%2015%20mins%3C/p%3E%3Cp%3ECook%20Time:%2025%20mins%3C/p%3E%3Cp%3ETotal%20Time:%2040%20minutes%3C/p%3E%3Cp%3EYield:%20Makes%20about%2022-24%20cupcakes%3C/p%3E%3Cp%3ECategory:%20Dessert,%20Brunch%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%20Line%20muffin%20pans%20with%20paper%20liners.%20Set%20aside.%20I
