I am not sure if she needs the introduction as she is one of the popular bloggers out there but in case you live in a cave and haven’t heard of her Peachy is a fellow Filipino who is not just popular with her mouth-watering Pinoy recipes and restaurant reviews but most importantly her extreme creativity towards some of the dishes she posts during festive occasions like Halloween, Christmas and Birthdays to name some. Hello Everyone! My name is Peachy and I blog over at The Peach Kitchen. My blog features simple, easy and tasty recipes which my family loves. I also feature recipes which I am trying for the first time. Some of which goes through a taste test and if my family approves, then it will be added to our regular menu.
I am very family oriented and I’d like to think that our family parties rock. Family occasions and celebrations becomes truly enjoyable because we turn them into themed parties. Some of those that we had are: New Year’s Eve Camping Party to Welcome 2013, My Daughter’s Rock Concert, My Daughter’s Luau Birthday Party and this Fall Themed Tea Party.
This Buko Pandan Drink is one of our favorite party drinks. It’s more like a dessert-drink because it’s chunkier than your average juice and it’s kind of like a thinner form of the usual Buko Pandan Salad. It is made with screwpine-infused green jelly, nata de coco, shredded coconut, coconut juice, tapioca and condensed milk.
Trust me. This is one amazing medley of flavors and texture.

Buko Pandan Drink / Coconut Screwpine Drink
Ingredients:
- 6 pandan leaves, washed and cut into 1-inch pieces
- 1 bottle of sweetened nata de coco
- meat and juice of 2 large coconuts, {meat shredded to strips}
- 3 cups tapioca pearls
- 1 1/2 cans of condensed milk
- 5 cups water
- 1 packet of green gelatin
Green food color – optional
Directions:
Boil the cut-up pandan leaves in water until the water is infused with pandan flavor. Remove the leaves from the water and throw it out.
Cook the gelatin according to packet directions but use two-thirds of the pandan infused water. Reduce the amount of water needed so you’ll get firmer gelatin.
Cut the gelatin into cubes when it solidifies.
Strain Nata de Coco to remove the sugar syrup.
In a large pitcher, combine shredded coconut meat, coconut juice, tapioca pearls, nata de coco, condensed milk, cubed gelatin, water and what’s left of the pandan-infused water.
Add green food color, if desired, just for presentation.
Mix well. Put in the fridge and chill for 2 hours.
