So many food bloggers have already jumped on the bandwagon with St. Patrick's Day recipes-- and I have to say that I've been busy pinning them on Pinterest. One of my most trusted source of tried-and-true recipes is from Cathy of Wives With Knives. Cathy shared her recipe for Colcannon, which is different version of what I've made in the past. If you've never had Colcannon, it's simply mashed potatoes with either cooked cabbage or green kale mixed in. My version has always used kale, but Cathy's recipe uses cabbage, green onion and bacon.

.%20%20Today's%20recipe%20was%20for%20Guinness%20Glazed%20Lamb%20Chops.%20%20I'm%20not%20a%20fan%20of%20dark%20beer,%20but%20since%20Guinness%20is%20made%20in%20Dublin,%20and%20St.%20Patrick's%20Day%20is%20just%20around%20the%20corner--%20it%20seemed%20a%20perfect%20choice%20for%20me%20to%20experiment%20with.%20%20%20I%20was%20intrigued%20about%20using%20Guinness%20to%20make%20a%20glaze.%20%20I%20had%20whole%20coriander%20and%20black%20pepper%20at%20home,%20so%20I%20thought%20I'd%20give%20it%20a%20go.%3C/p%3E%3Cp%3EAs%20soon%20as%20I%20arrived%20home,%20from%20work,%20I%20popped%20a%20can%20of%20Guinness,%20crushed%20some%20coriander%20and%20pepper%20and%20added%20that%20to%201/2%20cup%20of%20brown%20sugar.%3C/p%3E%3Cp%3EPer%20the%20recipe,%20I%20let%20this%20simmer%20for%20about%2020%20minutes,%20which%20gave%20me%20time%20to%20prepare%20the%20Colcannon.%3C/p%3E%3Cp%3EI%20like%20to%20mark%20a%20wooden%20spoon,%20with%20a%20rubberband,%20so%20show%20where%20the%20liquid%20started.%20As%20you%20can%20see,%20the%20beer%20did%20reduce%20to%20about%20half,%20in%2020%20minutes.%3C/p%3E%3Cp%3EThe%20liquid%20did%20reduce%20to%20almost%20a%20syrup,%20and%20was%20strained.%3C/p%3E%3Cp%3EI%20felt%20that%20the%20glaze%20wasn't%20quite%20thick%20enough,%20to%20my%20liking,%20so%20I%20return%20it%20to%20a%20boil--%20for%20about%20five%20minutes.%3C/p%3E%3Cp%3EThere%20we%20are!%20%20A%20thick%20syrup,%20which%20I%20divided%20into%20two%20separate%20bowls.%3C/p%3E%3Cp%3ENo,%20these%20aren't%20lamb%20chops.%20%20My%20husband%20doesn't%20love%20lamb%20as%20much%20as%20I%20do.%20%20So,%20I%20settled%20for%20bone-in%20pork%20chops,%20seasoned%20with%20salt%20&%20pepper.%20%20The%20syrup%20really%20thickened%20as%20it%20cooled,%20so%20be%20forewarned%20to%20keep%20it%20slightly%20warm--%20if%20you%20can.%20%20I%20broiled%20these%20about%206%22%20below%20the%20broiler%20for%20about%205%20minutes%20each-%20to%20about%20140F,%20which%20is%20perfect%20for%20us.%3C/p%3E%3Cp%3EAh,%20yes,%20an%20Irish-Themed%20Dinner,%20if%20I%20do%20say%20so%20myself.%20Unfortunately,%20I%20didn't%20have%20time%20to%20%22food-style%22%20with%20Green%20or%20decorations.%20After%20all,%20this%20is%20%20a%20work%20%20night%20for%20me!%20%20I%20did,%20however,%20drizzle%20the%20extra%20glaze%20over%20the%20chops.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20The%20flavor%20of%20the%20glaze%20was%20surprisingly%20good.%20%20The%20brown%20sugar%20gave%20a%20slight%20sweetness%20to%20the%20glaze--%20but%20not%20over-the--top,%20and%20the%20Guinness%20imparted%20a%20bit%20of%20a%20molasses%20flavor.%20%20Craig%20and%20I%20really%20liked%20the%20glaze--%20a%20lot.%20%20I%20would%20definitely%20make%20this%20again,%20and%20I'd%20love%20to%20try%20this%20on%20some%20rib%20lamb%20chops.%3C/p%3E%3Cp%3EI%20still%20have%20one%20more%20recipe%20I%20hope%20to%20make%20for%20St.%20Patrick's%20Day.%20Only,%20this%20one%20does%20have%20lamb%20in%20it%20and%20I%20am%20sure%20my%20husband%20will%20love%20it.%20%20The%20lamb%20stew%20with%20potatoes%20and%20barley%20was%20outstanding,%20and%20you%20can%20view%20the%20recipe%20here.%3C/p%3E){kind=link}
