.%20I%20haven%E2%80%99t%20had%20the%20chance%20to%20read%20the%20book%20from%20cover%20to%20cover%20(yes,%20I%20do%20read%20cookbooks%E2%80%A6%20shut%20it),%20but%20I%20most%20certainly%20hunkered%20down%20for%20a%20few%20moments%20after%20ripping%20the%20gift%20open%20to%20peruse%20long%20enough%20to%20find%20a%20seemingly%20sure-fire%20recipe%20to%20test%20out%20over%20the%20holiday.%3C/p%3E%3Cp%3EIt%20should%20be%20no%20surprise%20that%20I%20stopped,%20dead%20in%20my%20tracks,%20at%20a%20recipe%20with%20these%20two%20words:%20ginger%20and%20Guinness.%3C/p%3E%3Cp%3EI%E2%80%99ve%20really%20developed%20quite%20an%20affinity%20for%20dark%20beers%20lately,%20and%20Guinness%20is%20an%20obvious%20go-to%20in%20that%20category%20%E2%80%93%20they%20are%20chocolatey,%20nutty,%20and%20perfect%20for%20this%20weather.%20I%E2%80%99m%20sure%20most%20any%20porter%20or%20stout%20would%20work%20here,%20and%20had%20I%20been%20in%20an%20area%20loaded%20with%20a%20plethora%20of%20microbrew%20choices,%20I%20probably%20would%20have%20gone%20for%20a%20Breckenridge%20Vanilla%20Porter%20or%20a%20Left%20Hand%20Milk%20Stout%20(gotta%20support%20the%20southpaws,%20since%20I%E2%80%99m%20one%20of%20%E2%80%98em!),%20but%20really,%20you%20can%E2%80%99t%20go%20wrong%20with%20Guinness.%20Plus,%20it%E2%80%99s%20good%20for%20you,%20remember?!%3C/p%3E%3Cp%3EAlthough%20I%20had%20no%20doubt%20(ok,%20a%20little,%20since%20the%20batter%20appeared%20%E2%80%98watery%E2%80%99),%20these%20cupcakes%20did%20not%20disappoint.%20They%20are%20light%20and%20fluffy,%20each%20bite%20into%20the%20%E2%80%98cake%20creating%20a%20small%20indention,%20but%20then%20a%20quick%20spring%20back%20%E2%80%93%20like%20the%20dough%20for%20bread%20when%20first%20kneading.%20The%20ginger%20and%20Guinness%20are%20definitely%20palpable,%20but%20so%20is%20the%20molasses,%20and%20we%20all%20know%20how%20much%20I%20love%20that.%20Naked,%20they%20are%20certainly%20sweet,%20almost%20cloyingly%20so,%20but%20the%20frosting,%20kicked%20up%20with%20a%20few%20squirts%20of%20lime,%20adds%20enough%20zip%20to%20provide%20perfect%20balance.%20They%20smell%20fresh,%20bursting%20with%20citrus%20and%20all%20things%20good%20in%20the%20world.%3C/p%3E%3Cp%3EYou%20could%20make%20them%20now,%20today,%20and%20finish%20up%202010%20with%20a%20bang.%20Or%20you%20can%20hold%20out%20for%20a%20couple%20of%20days,%20and%20start%20the%20New%20Year%20off%20right%20%E2%80%93%20with%20more%20ginger,%20more%20molasses,%20and%20even%20better%20%E2%80%93%20more%20Guinness.%20That%E2%80%99s%20a%20resolution%20I%20can%20easily%20stick%20with,%20and%20you%20should%20too.%3C/p%3E%3Cp%3EGuinness-Gingerbread%20Cupcakes%20w/%20Lime%20Frosting%3C/p%3E%3Cp%3EAdapted,%20barely,%20from%20David%20Lebovitz%E2%80%99s%20Ready%20for%20Dessert;%20makes%2012%3C/p%3E%3Cp%3Etime%20commitment:%201%20hour,%20plus%20cooling%3C/p%3E%3Cp%3Eingredients%3C/p%3E%3Cp%3Ecupcakes%3C/p%3E%3Cp%3Einstructions%3C/p%3E%3Cp%3Epreheat%20oven%20to%20350%20F.%20line%2012-cup%20muffin%20tin%20with%20cupcake%20liners.%3C/p%3E%3Cp%3Ein%20a%20large%20saucepan,%20bring%20Guinness,%20molasses,%20and%20oil%20to%20boil%20over%20med-hi.%20remove%20from%20heat%20and%20whisk%20in%20baking%20soda%20until%20dissolved.%20stir%20in%20brown%20sugar%20and%20let%20cool.%3C/p%3E%3Cp%3Ein%20a%20small%20bowl,%20combine%20flour,%20baking%20powder,%20spices,%20and%20salt.%3C/p%3E%3Cp%3Ewhisk%20eggs%20into%20cooled%20brown%20sugar%20/%20Guinness%20mixture,%20then%20whisk%20in%20flour%20mixture%20until%20incorporated,%20being%20careful%20not%20to%20overmix.%20stir%20in%20minced%20ginger.%3C/p%3E%3Cp%3Edivide%20batter%20among%20cupcake%20liners%20and%20bake%2022-24%20minutes.%20cool%20completely%20on%20a%20wire%20rack.%3C/p%3E%3Cp%3Emeanwhile,%20make%20the%20frosting.%20beat%20butter%20on%20high%20speed%20until%20smooth%20and%20with%20speed%20on%20low,%20add%20in%201/2%20of%20the%20powdered%20sugar.%20scrape%20down%20sides,%20add%20the%20lime%20juice%20and%20the%20remaining%20powdered%20sugar,%20and%20beat%20again,%20finishing%20by%20adding%20the%20milk.%20beat%20until%20fluffy,%20and%20add%20more%20lime%20juice%20if%20desired.%3C/p%3E%3Cp%3Efrost%20cooled%20cupcakes%20with%20lime%20frosting%20and%20garnish%20with%20ginger,%20if%20desired.%3C/p%3E%3Cp%3ERandom%20Posts%3C/p%3E%3Cp%3ETags:%20cupcake,%20David%20Lebovitz,%20ginger,%20Guinness,%20lime,%20molasses,%20Ready%20for%20Dessert%3C/p%3E){kind=link}
