%20and%20Yasodha%20(%20South%20team)%3C/p%3E%3Cp%3EA%20bit%20about%20Gulab%20Jamun%3C/p%3E%3Cp%3EThe%20history%20says%20that%20Gulab%20jamun%20originates%20from%20an%20Arabic%20dessert%20called%20Luqmat%20Al-Qadi%20and%20became%20popular%20during%20the%20Mughal%20era.%3C/p%3E%3Cp%3EIn%20Nepal%20it%20is%20widely%20known%20as%20Lalmohan,The%20Persian%20word%20Gulab%20(%E0%A4%97%E0%A5%81%E0%A4%B2%E0%A4%BE%E0%A4%AC)%20means%20rose,%20as%20rosewater%20syrup%20is%20often%20used,%20although%20saffron%20syrup%20and%20honey%20are%20also%20common.%3C/p%3E%3Cp%3EJamun%20may%20refer%20to%20the%20jambul%20fruit,%20which%20is%20usually%20of%20a%20similar%20size%20to%20pieces%20of%20the%20dessert.%20There%20are%20various%20claims%20regarding%20the%20originator%20of%20the%20dish,%20with%20some%20saying%20a%20Sikh%20chef%20named%20Sajjan%20Dhillon%20first%20prepared%20it%20as%20a%20delicacy%20for%20the%20king%20of%20Jalalabad.%20The%20dessert%20also%20became%20popular%20throughout%20the%20Ottoman%20Empire.%3C/p%3E%3Cp%3EVariants:%3C/p%3E%3Cp%3EKemal%20Pasha%20dessert%3C/p%3E%3Cp%3EKemal%20Pasha%20dessert%20is%20a%20dish%20that%20is%20very%20similar%20to%20gulab%20jamun.%20It%20originates%20from%20the%20district%20of%20Kemalpa%C5%9Fa,Bursa,%20in%20Turkey.%20Traditionally%20it%20is%20made%20using%20a%20variety%20of%20cheese%20that%20is%20particular%20to%20the%20region.%3C/p%3E%3Cp%3EKala%20jamun,%20%22black%20jamun%22%3C/p%3E%3Cp%3EGulab%20jamun%20gets%20its%20brownish%20red%20color%20because%20of%20the%20sugar%20content%20in%20the%20milk%20powder%20or%20khoya%20or%20bread.%20In%20other%20types%20of%20gulab%20jamun,%20sugar%20is%20added%20in%20the%20dough,%20and%20after%20frying,%20the%20sugar%20caramelization%20gives%20it%20its%20dark,%20almost%20black%20colour,%20which%20is%20then%20called%20kala%20jamun,%20%22black%20jamun%22.%3C/p%3E%3Cp%3ECanadian%20Jamun%3C/p%3E%3Cp%3EThe%20sugar%20syrup%20may%20be%20replaced%20with%20(slightly)%20diluted%20maple%20syrup%20for%20a%20gulab%20jamun%20with%20a%20Canadian%20flavour.%3C/p%3E%3Cp%3EHere%20is%20how%20I%20made%20it.%3C/p%3E%3Cp%3EI%20had%20a%20sweet%20helper%20this%20time%20too%20:-)%3C/p%3E%3Cp%3ERecipe%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3E-%20Sift%20the%20milk%20powder,%20flour,%20semolina%20and%20baking%20powder.%3C/p%3E%3Cp%3E-%20To%20this,%20add%20the%20ghee%20and%20mix%20well,%20like%20u%20would%20for%20puttu%20or%20naan.%20Now%20add%20the%20milk,%202%20tbsp%20to%20start%20with,%20and%20make%20soft%20dough%20out%20of%20it.%20Add%20another%20tbsp%20if%20you%20feel%20the%20mix%20is%20dry.%3C/p%3E%3Cp%3E-%20Bring%20the%20dough%20together%20and%20using%20the%20palm%20of%20one%20hand%20and%20fingers%20of%20other%20and%20then%20between%20both%20palms%20a%20ball%20and%20place%20in%20a%20bowl.%20Cover%20with%20oiled%20cling%20film%20and%20let%20it%20sit%20for%2020-30%20min.%3C/p%3E%3Cp%3E-%20Meanwhile,%20in%20a%20pan%20bring%20the%20sugar%20and%20water%20to%20the%20boil.%20Make%20sure%20the%20sugar%20dissolves%20completely.%20Add%20the%20gulab%20jal/rose%20water.%20Keep%20it%20aside%20till%20further%20use.%3C/p%3E%3Cp%3E-%20Make%20small%20balls%20out%20of%20the%20dough.%20In%20a%20deep%20pan%20pour%20sufficient%20oil%20that%20can%20immerse%20the%20dough%20balls%20completely.%20Heat%20the%20oil%20on%20full%20flame.%20Once%20it%20smokes,%20reduce%20the%20flame%20to%20medium.%20After%20the%20smoke%20disappears,%20add%20one%20dough%20ball%20first.%20If%20it%20turns%20black%20on%20the%20outside,%20reduce%20the%20flame%20to%20low-medium.%20We%20are%20looking%20for%20an%20inviting%20brown%20color%20on%20the%20dough%20balls.%3C/p%3E%3Cp%3E-%20You%20may%20fry%202-3%20at%20a%20time%20depending%20on%20the%20size%20of%20ur%20pan.%20But%20be%20sure%20to%20constantly%20roll%20the%20balls%20in%20the%20oil%20so%20that%20they%20get%20an%20even%20color.%3C/p%3E%3Cp%3E-%20Remove%20with%20a%20slotted%20spoon%20and%20add%20directly%20to%20the%20warm%20sugar%20syrup.%3C/p%3E%3Cp%3E-%20To%20serve,%20put%20a%20few%20balls%20of%20the%20gulab%20jamun,%20some%20syrup%20and%20garnish%20with%20almond%20slivers.%3C/p%3E%3Cp%3EConfession:%3C/p%3E%3Cp%3ENow,%20I%20had%20a%20few%20hiccups%20while%20trying%20to%20make%20it.%3C/p%3E%3Cp%3EEverthing%20went%20well,%20I%20was%20happy%20with%20my%20pictures,%20until%20I%20dropped%20my%20first%20jamun%20ball%20in%20oil.%20To%20my%20horror,%20it%20started%20disintegrating,%20the%20disintegrated%20bits%20started%20to%20burn%20in%20the%20hot%20oil%20and%20my%20fire%20alarm%20went%20off.%20I%20quickly%20closed%20my%20kitchen%20door,%20opened%20the%20door%20out,%20like%20u%20do%20in%20these%20circumstances,%20and%20when%20I%20looked%20at%20my%20hot%20oil%20pot,%20the%20jamun%20was%20no%20where%20to%20be%20found.%20It%20had%20disappeared%20to%20leave%20tiny%20black%20dots%20fo%20burnt%20stuff.%3C/p%3E%3Cp%3ENow,%20where%20did%20I%20go%20wrong!!%20How%20can%20I%20face%20myself.%20:-)%20.The%20only%20difference%20to%20the%20recipe%20I%20am%20used%20to%20preparing%20was%20the%20baking%20powder.%20Did%20I%20use%20too%20much%20of%20it%20was%20my%20question.%3C/p%3E%3Cp%3EGoogle%20came%20to%20the%20'rescue'.%20Various%20people%20had%20posted%20about%20this%20same%20experience%20and%20too%20much%20baking%20powder%20was%20the%20culprit%20apparently%20each%20time.%3C/p%3E%3Cp%3EA%20pinch%20of%20mine%20could%20have%20been%20a%20bit%20more%20that%20needed.%20The%20second%20time%20I%20avoided%20it,%20for%20a%20better%20result.%3C/p%3E%3Cp%3EI%20called%20out%20to%20the%20SNC%20team%20for%20help,%20and%20God%20they%20were%20so%20helpful.%20U%20guys%20rock.%20I%20learnt%20%20a%20lot%20during%20this%20challenge.%20I%20suppose%20that's%20what%20these%20challenges%20are%20all%20about.%20Thank%20u%20very%20much%20my%20dears%20for%20the%20support%20first%20of%20all,%20not%20making%20me%20feel%20like%20a%20fool,%20and%20those%20outstanding%20tips%20u%20shared.%3C/p%3E%3Cp%3ETips%20I%20learnt:%3C/p%3E%3Cp%3E-%20Add%20as%20less%20or%20avoid%20baking%20powder%20if%20u%20r%20vary%20of%20the%20results.%3C/p%3E%3Cp%3E-%20Keeping%20the%20balls%20in%20refrigerator%20during%20the%20resting%20period%20helps%20them%20not%20to%20break.%3C/p%3E%3Cp%3E-%20Maintaining%20low%20to%20medium%20heat%20is%20essential%20for%20the%20inside%20to%20be%20cooked%20and%20the%20outside%20to%20be%20not%20burnt.%3C/p%3E){kind=link}
