Hubby actually made an appearance at the grocery store with me the other day–shocking I know. He found it to be quite the social gathering and now knows why it takes me so long to get through the place! He also found all kinds of things that I never look at. For instance, lamb slices in our deli. Now I’ve seen them before but never thought to buy them and never thought about what I would do with them. He picked them up and said, “Let’s make gyros”. Now, I’m always game for something new, but there was no way I was going to buy the packaged tzatziki sauce! So I set out on a quest to find a recipe and threw together a mix of 3 different recipes and I think it turned out pretty perfect…
Gyros with Tzatziki Sauce
INGREDIENTS:
- 1 small cucumber-half grated, half chopped very small
- 1 tablespoon fresh dill weed
- 1 teaspoon lemon zest
- 1 cup Greek-style yogurt
- 1/2 small onion-sliced thinly
- 1 teaspoon sugar
- Salt & pepper to taste
- 1 pound thinly sliced Gyro lamb
Pitas
DIRECTIONS:
In a small mixing bowl, add the first seven ingredients. You may need to adjust the amount of sugar and salt and pepper to your liking. I tended to add a lot of pepper and the sugar helped cut the sourness of the yogurt. Cover and refrigerate while you get the meat and pitas ready.
In a fry pan, brown up the meat. It should be cooked already, you are just looking for it to get a little brown. Brush a little olive oil on each side of the pitas and in a separate pan, fry them on both sides until
they are a little brown.
Layer the meat on half of a pita, top with the tzatziki sauce and eat–not worrying about how messy you get from the yummy sauce that will end up all over your face and hands!
