Ingredientes

  • 5 x plum tomatoes Salt to taste Freshly-grnd black pepper to taste
  • 1/2 Tbsp. extra virgin olive oil
  • 1/2 c. cilantro leaves - (loosely packed)
  • 1 Tbsp. lemon juice
  • 1 Tbsp. granulated garlic with parsley Nonstick cooking spray as needed
  • 1/4 c. extra virgin olive oil
  • 3 x celery stalks chopped
  • 1 x carrot grated
  • 1/2 x green bell pepper chopped
  • 1/2 x red bell pepper chopped
  • 1/2 x onion chopped
  • 1 1/2 lb grnd beef
  • 4 x Large eggs
  • 1 Tbsp. tomato paste
  • 1/2 lb bacon slices divided
  • 1 1/4 c. fresh bread crumbs
  • 1/2 tsp salt
  • 1 tsp cayenne pepper
  • 1/2 tsp freshly-grnd black pepper
  • 1 tsp garlic pwdr
  • 1 Tbsp. herbes de Provence
  • 1/3 c. flour

Direcciones

  1. For the Roasted Tomato Sauce: Heat the broiler. Cut the tomatoes in half and place them on a baking sheet. Sprinkle them with salt and pepper to taste and the extra virgin olive oil. Broil till blackened, 5 min on the skin side and 10 min on the cut side.
  2. Place half of the tomatoes, the cilantro, lemon juice, 1/2 tsp. of pepper and the granulated garlic in a blender and blend till smooth. Remove the sauce to a bowl. Puree the remaining tomatoes till smooth and add in to the tomato sauce. Set aside.
  3. For the Meatloaf: Heat the oven to 350 degrees. Coat a shallow baking pan with cooking spray and set aside.
  4. Heat the extra virgin olive oil in a large skillet over medium-high heat. Add in the celery, carrot, green and red peppers and onion and cook over medium-high heat till slightly softened, 2 to 3 min. Remove from the heat and set aside.
  5. Finely chop 4 of the bacon slices. Combine the beef, Large eggs, tomato paste, minced bacon, bread crumbs, salt, cayenne and black peppers, garlic, herbes de Provence, flour and the cooked vegetables in a large mixing bowl. Mix together well.
  6. Shape into a loaf in a shallow baking pan and cover the loaf with the bacon slices. Bake till a meat thermometer inserted into the loaf registers 155 degrees, 1 hour, 15 min. Then, if needed, place the meatloaf under the broiler to brown the bacon, about 2 min. Let stand 10 min before slicing. Serve with Roasted Tomato Sauce.
