Ham And Cheese Stuffed Potatoes

Ingredientes

  • 4 lrg baking potatoes
  • 1 tsp shortening
  • 6 Tbsp. butter
  • 2 Tbsp. grated onion
  • 1/4 tsp pepper
  • 2 x Large eggs
  • 1 1/2 c. shredded cheese
  • 1 c. diced ham

Direcciones

  1. Heat oven to 375. Scrub potatoes; pat dry. Rub each potato with shortening; prick several places with fork. Bake for about 1 hour or possibly till done. Cut potatoes in halves lengthwise; scoop out inside, leaving a thin shell. In large bowl, beat potatoes 1 minute. Add in butter, onion, pepper, and Large eggs; continue beating till mix is smooth and fluffy. Mix in 1 c. cheese (reserve remaining cheese for topping) and ham. Fill potato shells with mix; top with reserved cheese. Bake at 375 for 15 min or possibly till potatoes are heated through and cheese is melted.
