You can eat this on its own, or place fried egg on top. Perfect for leftover ham. Ham and Potato Hash Recipe by Christine Lamb @ Christine's Pantry - 2016 Ingredients: 2 large potatoes, diced 1 1/2 cup cooked ham, diced 1 (4 oz.) can mushrooms, drained 1 onion, chopped cooking oil salt and pepper Directions: Cover the bottom of a large skillet with cooking oil over medium heat. Add potatoes, salt, stirring often. Cook until slightly browned and soft.  Add onions, mushrooms and ham, cook until onions tender, about 4 minutes, and ham is heated through. Sprinkle with black pepper.  Enjoy, Christine
