%20I%20enjoyed%20reading%20the%20book%20%22Warm%20Bodies%22%20by%20Isaac%20Marion.%20I%20watched%20the%20movie%20last%20weekend%20with%20a%20friend%20after%20she%20suggested%20I%20would%20like%20it.%20I%20am%20sure%20I%20saw%20promos%20for%20it%20on%20YouTube,%20but%20I%20am%20not%20an%20avid%20movie%20or%20TV%20watcher%20so%20I%20missed%20out%20learning%20about%20it%20until%20it%20had%20been%20on%20the%20screen%20for%20about%205%20weeks.%20I%20liked%20the%20movie%20so%20much%20I%20had%20to%20read%20the%20book.%20I%20think%20it's%20the%20first%20time%20in%20my%20life%20that%20I%20have%20liked%20a%20movie%20as%20much%20as%20the%20book%20it%20is%20based%20on.%20The%20plots%20are%20somewhat%20different%20but%20both%20still%20good.%3C/p%3E%3Cp%3ESpeaking%20of%20not%20watching%20much%20TV,%20I%20haven't%20watched%20Food%20Network%20in%20months%20but%20I%20recently%20managed%20to%20catch%20an%20episode%20of%20Barefoot%20Contessa.%20One%20of%20the%20recipes%20included%20was%20for%20Eggs%20Columbian,%20which%20was%20a%20really%20simple%20recipe%20of%20scrambled%20eggs%20with%20tomatoes%20and%20scallions%20wrapped%20in%20a%20tortilla.%20The%20egg%20part%20appealed%20to%20me%20because%20I%20am%20always%20looking%20for%20new%20breakfasts.%20Of%20course%20I%20needed%20to%20ditch%20the%20tortilla%20since%20it's%20neither%20low-carb%20nor%20Paleo.%20For%20my%20re-make%20of%20the%20recipe,%20I%20chose%20to%20use%20nitrite-free%20ham%20slices.%20The%20ham%20is%20not%20really%20for%20the%20sake%20of%20eating%20the%20eggs%20as%20a%20wrap;%20it's%20more%20for%20looks%20and%20to%20give%20a%20nice%20presentation%20(plus%20it%20tastes%20good).%20I%20think%20my%20version%20would%20be%20nice%20for%20breakfast,%20as%20part%20of%20brunch%20with%20maybe%20some%20fruit,%20or%20even%20lunch%20with%20a%20salad.%3C/p%3E%3Cp%3EHam-Wrapped%20Eggs%20Columbian%3C/p%3E%3Cp%3E1%20tsp%20olive%20oil%3C/p%3E%3Cp%3E1%20small%20or%20half%20a%20large%20roma%20tomato,%20seeded%20and%20diced%3C/p%3E%3Cp%3E1%20scallion,%20sliced%3C/p%3E%3Cp%3E2%20eggs,%20beaten%20and%20seasoned%20to%20taste%20with%20salt%20and%20pepper%3C/p%3E%3Cp%3E2%20slices%20nitrite-free%20ham%20(I%20used%20Applegate%20Farms)%3C/p%3E%3Cp%3E1.%20In%20a%20small%20skillet%20over%20medium%20heat,%20heat%20the%20oil.%20Add%20the%20tomato%20and%20scallion%20and%20stir-fry%20for%20a%20few%20minutes,%20or%20until%20the%20scallions%20softens.%3C/p%3E%3Cp%3E2.%20Lower%20the%20heat%20to%20medium-low.%20Add%20the%20eggs%20and%20stir%20frequently%20to%20scramble.%3C/p%3E%3Cp%3E3.%20Meanwhile,%20warm%20the%20ham%20slices%20in%20a%20separate%20skillet.%3C/p%3E%3Cp%3E4.%20Scramble%20the%20eggs%20to%20your%20liking.%20Place%20the%20ham%20on%20a%20plate.%20Divide%20the%20eggs%20between%20the%20ham%20slices,%20roll%20up,%20and%20serve.%3C/p%3E%3Cp%3EServings%20per%20recipe:%201%3C/p%3E%3Cp%3EPer%20serving:%3C/p%3E%3Cp%3ECalories:%20267%3C/p%3E){kind=link}
