%3C/p%3E%3Cp%3EAs%20I%20was%20expecting%20a%20crowd,%20I%20made%20an%208%22%20cake%20by%20adapting%20my%20favourite%207%22%20sponge%20cake%20recipe.%20I%20was%20glad%20that%20the%20sponge%20cake%20turned%20out%20well%20as%20I%20was%20really%20just%20trying%20my%20luck%20to%20meddle%20with%20the%20ingredient%20amount!%20I%20whipped%20up%20some%20non-dairy%20cream%20and%20added%20in%20some%20durian%20pulp.%20It%20tasted%20yummy!%20Then%20I%20sliced%20the%20sponge%20cake%20into%20three%20layers%20and%20sandwiched%20each%20layer%20with%20some%20non-dairy%20whipped%20cream%20followed%20by%20a%20layer%20of%20fresh%20durian%20pulp.%20The%20cake%20was%20then%20covered%20with%20the%20left%20over%20durian%20whipped%20cream%20mixture%20before%20it%20was%20covered%20generously%20with%20lots%20of%20oreo%20cookie%20crumbs.%3C/p%3E%3Cp%3EExcept%20for%20a%20couple%20of%20kids%20who%20are%20non-durian%20lovers,%20all%20the%20guests%20enjoyed%20the%20cake.%20The%20durain%20was%20really%20good...it%20was%20very%20creamy%20and%20came%20with%20very%20thick%20flesh%20and%20had%20got%20a%20bitter%20sweet%20taste.%20An%20excellent%20choice%20to%20please%20both%20'camps'%20of%20durian%20lovers...those%20who%20prefer%20sweet%20durians%20vs%20those%20who%20just%20love%20a%20stronger%20bitter%20taste.%20It's%20a%20pity%20I%20didn't%20have%20the%20chance%20to%20take%20a%20photo%20of%20a%20slice%20of%20cake.%20Even%20though%20I%20love%20the%20cake,%20I%20doubt%20I%20would%20make%20it%20again%20any%20sooner%20as%20I%20really%20couldn't%20stand%20the%20stinky%20fridge%20after%20having%20this%20durian%20cake%20sitting%20in%20it%20all%20night!%3C/p%3E%3Cp%3EI%20will%20post%20the%20recipe%20unless%20there%20are%20many%20requests%20for%20it%20since%20not%20everyone%20likes%20durian%20;)%3C/p%3E%3Cp%3E(As%20there%20are%20a%20number%20of%20requests,%20I%20have%20posted%20the%20recipe%20here.)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E(makes%20one%2020cm%20cake)%3C/p%3E%3Cp%3EIngredients%20A:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3ETo%20make%20the%20sponge%20cake:%3C/p%3E%3Cp%3ESift%20cake%20flour,%20set%20aside.%20Line%20the%20sides%20and%20bottom%20of%20a%2020cm%20(8%20inches)%20round%20pan%20with%20parchment%20paper,%20set%20aside.%20Pre-heat%20oven%20to%20170degC.%20Position%20rack%20at%20the%20lower%20bottom%20of%20the%20oven.%3C/p%3E%3Cp%3EWith%20an%20electric%20mixer,%20whisk%20eggs%20and%20sugar%20on%20HIGH%20speed%20for%20about%205%20to%207%20mins,%20until%20the%20batter%20double%20in%20volume%20and%20is%20ribbon-like%20(the%20beater%20should%20leave%20a%20ribbon-like%20trail%20when%20the%20batter%20is%20lifted%20up).%20Turn%20to%20LOW%20speed%20and%20whisk%20for%20another%201%20to%202%20mins.%20Whisking%20at%20low%20speed%20helps%20to%20stabilise%20the%20air%20bubbles%20in%20the%20batter.%3C/p%3E%3Cp%3EAdd%20sifted%20cake%20flour%20into%20the%20batter%20in%203%20separate%20additions.%20Gently%20fold%20in%20the%20flour%20with%20a%20spatula%20each%20time%20the%20flour%20is%20added.%20Take%20care%20not%20to%20deflate%20the%20batter.%3C/p%3E%3Cp%3EAdd%20the%20melted%20butter,%20fold%20with%20spatula%20until%20well%20blended%3C/p%3E%3Cp%3EAdd%20in%20fresh%20milk,%20vanilla%20extract%20and%20fold%20in%20gently%20with%20spatula.%3C/p%3E%3Cp%3EPour%20the%20batter%20into%20the%20pan%20and%20bake%20for%2030~35%20mins,%20or%20until%20a%20skewer%20inserted%20in%20the%20centre%20comes%20out%20clean.%20Unmold%20and%20invert%20onto%20cooling%20rack,%20remove%20parchment%20paper%20and%20let%20cool%20completely.%3C/p%3E%3Cp%3ETo%20make%20the%20filling:%3C/p%3E%3Cp%3EBlend%20durian%20flesh%20(Ingredient%20B)%20until%20the%20pulp%20becomes%20smooth*.%20(As%20the%20durian%20flesh%20is%20quite%20thick,%20the%20blade%20of%20your%20blender%20may%20not%20work%20properly,%20stir%20the%20mixture%20with%20a%20spoon%20or%20add%20one%20or%20two%20teaspoons%20of%20water%20to%20get%20it%20going.%20*Depending%20on%20preference,%20blend%20the%20durian%20flesh%20to%20the%20desired%20consistency,%20I%20didn't%20blend%20it%20till%20very%20smooth,%20there%20were%20still%20tiny%20chunks%20of%20durian%20pulp/fibre.)%20Do%20the%20same%20for%20Ingredient%20C.%3C/p%3E%3Cp%3EWith%20an%20electric%20mixer,%20whisk%20non-dairy%20whipping%20cream%20till%20stiff.%20Add%20the%2050g%20of%20durian%20puree%20to%20the%20whipped%20cream.%20Fold%20in%20with%20a%20spatula,%20blend%20thoroughly.%20(Depending%20on%20the%20consistency%20of%20the%20durian%20puree,%20tiny%20bits%20of%20durian%20fibre%20would%20be%20visible%20in%20the%20whipped%20cream%20mixture.)%3C/p%3E%3Cp%3ETo%20assemble:%3C/p%3E%3Cp%3EDissolve%20the%20sugar%20in%20hot%20water%20(Ingredients%20D).%20Let%20cool.%3C/p%3E%3Cp%3ESlice%20the%20cake%20horizontally%20into%203%20layers.%20Place%20one%20layer%20of%20the%20sponge%20cake%20on%20a%2020cm%20cake%20board.%20Brush%20the%20surface%20of%20the%20sponge%20layer%20with%20the%20sugar%20syrup%20(this%20is%20to%20keep%20the%20sponge%20layers%20from%20drying%20out%20upon%20chilling).%3C/p%3E%3Cp%3ESpread%20about%201.5%20cups%20of%20filling%20evenly%20on%20the%20sponge%20layer.%20Spread%20half%20of%20the%20durian%20puree%20(Ingredient%20C)%20evenly%20over%20the%20filling.%3C/p%3E%3Cp%3EBrush%20both%20sides%20of%20the%20second%20layer%20of%20sponge%20cake%20with%20the%20sugar%20syrup%20and%20place%20it%20over%20the%20first%20layer.%20Spread%20with%201.5%20cups%20of%20filling%20followed%20by%20the%20remaining%20durian%20puree.%3C/p%3E%3Cp%3EBrush%20both%20sides%20of%20the%20last%20layer%20of%20sponge%20cake%20with%20the%20sugar%20syrup%20and%20spread%20the%20remaining%20filling%20on%20the%20surface%20and%20sides%20evenly.%20Leave%20the%20cake%20to%20chill%20in%20the%20fridge%20for%20at%20least%203~4%20hours.%3C/p%3E%3Cp%3ERemove%20cake%20from%20fridge%20and%20cover%20the%20whole%20cake%20with%20crushed%20oreo%20cookie%20crumbs%20(remove%20the%20fillings%20between%20the%20cookies)%20and%20decorate%20as%20desired.%20Keep%20the%20cake%20in%20the%20fridge%20before%20serving.%3C/p%3E){kind=link}
