Happy Birthday, Hubby!
Happy Birthday, Hubby! He would hate that I am putting this not-so-glamorous picture of him on my little blog, but it’s the only one I have that also shows the cake (and more importantly, the frosting) that I wanted to talk about today.
You see, my mother-in-law makes this cake (and more importantly, the frosting) for each and every one of his birthdays, it is the one time of the year that we turn a blind eye to what is in the frosting and just appreciate it for how it makes us feel, and that is HAPPY! And since she also makes it for his sister, my other wonderful sister-in-law, Andrea, if we happen to be with her to celebrate, we eat it twice in one year. And that makes us HAPPY as well!
So, on to the meaning of life frosting recipe. For some reason it really only tastes the best on an angel food cake and store bought works fine, remember it’s the frosting that is the star here…
Butter Cream Frosting:
INGREDIENTS:
- 1/2 cup milk
- 1 teaspoon vanilla
- 1 cup superfine sugar
- 1/8 teaspoon salt
- 1/2 cup butter
- 1/2 cup margarine
DIRECTIONS:
Scald the milk and let it cool. Add the vanilla to cooled milk. Whip the butter and margarine together for about 3-4 minutes, until it’s like heavy cream (but not soft and runny). Add salt and then the sugar, 1/4 cup at a time, beating for 30 seconds between each addition. Once all sugar is added, beat for 2 minutes. Then add 2 tablespoons of the milk at a time, once all the milk is added, beat for 2 minutes more and then frost on a store bought angel food cake and eat until your eyes roll to the back of your head!
