%20)%20Of%20course%20I%20couldn't%20show%20up%20empty-handed.%3C/p%3E%3Cp%3EMy%20Mom%20loved%20the%20White%20Cake%20Cupcakes%20that%20I%20made%20at%20the%20beginning%20of%20the%20month.%20So%20that%20gave%20me%20a%20starting%20point.%20For%20once,%20I%20followed%20my%20own%20recipe%20to%20the%20letter....except%20when%20it%20came%20time%20for%20the%20extracts.%20:)%20I%20still%20used%20vanilla%20extract,%20but%20just%20a%20little%20bit.%20Instead%20of%20the%20brandy%20extract,%20I%20used%20black%20walnut%20extract%20and%20increased%20the%20amount.%20As%20before,%20they%20turned%20out%20wonderfully%20moist%20and%20light.%3C/p%3E%3Cp%3EFluffy%20egg%20whites%20used%20in%20White%20Cake%20Cupcakes.%20%20%20%20%20To%20mix%20it%20up%20a%20bit,%20I%20needed%20a%20new%20icing.%20I%20didn't%20have%20any%20more%20vanilla%20beans%20and%20I%20needed%20to%20make%20sure%20it%20was%20purple.%20(Purple%20is%20my%20Mom's%20favorite%20color.)%20I%20came%20up%20with:%3C/p%3E%3Cp%3EPurple%20Espresso%20Frosting%3C/p%3E%3Cp%3EUsing%20a%20stand%20mixer%20fitted%20with%20the%20paddle%20attachment,%20cream%20together%20the%20cream%20cheese%20and%20butter.%20Beat%20on%20medium%20speed%20until%20creamy,%20smooth%20and%20shiny.%3C/p%3E%3Cp%3ETurn%20off%20mixer%20and%20scrape%20down%20the%20sides.%20Add%20in%20the%20egg%20yolks.%20Continue%20beating%20on%20medium-low%20speed%20until%20it%20all%20comes%20together.%3C/p%3E%3Cp%3EScrape%20the%20sides%20of%20the%20bowl%20down%20again.%20Pour%20in%20the%20espresso%20water%20and%20add%201%20cup%20of%20the%20powdered%20sugar.%20Beat%20on%20low.%20With%20the%20next%20addition%20of%20powdered%20sugar,%20add%20in%20the%20cream%20of%20tartar.%20Go%20ahead%20and%20add%20in%20the%20coloring%20at%20this%20point%20so%20that%20it%20will%20have%20plenty%20of%20time%20to%20get%20mixed%20throughout%20all%20the%20icing%20without%20needing%20to%20over-beat.%20Continue%20beating%20in%20the%20powdered%20sugar%20on%20low.%20Or%20else%20you%20will%20have%20a%20plume%20of%20sugar%20rising%20up%20from%20where%20you%20stand.%20:)%3C/p%3E%3Cp%3EPerhaps%20instead%20of%20purple,%20we%20should%20say%20lavender.%20:)%20%20%20%20Once%20all%20sugar%20has%20been%20added,%20increase%20speed%20to%20high%20for%20about%205%20minutes.%20Using%20a%20piping%20bag%20fitted%20with%20the%20tip%20of%20choice,%20frost%20the%20cooled%20cupcakes.%3C/p%3E%3Cp%3EChopped%20hazelnuts.%3C/p%3E%3Cp%3EI%20sprinkled%20some%20crushed%20hazelnuts%20over%20some%20of%20the%20cupcakes%20(because%20not%20everyone%20can%20eat%20nuts)%20and%20then%20sprinkled%20purple%20sugar%20over%20the%20top%20of%20all%20the%20cupcakes.%20I%20do%20recommend%20using%20nuts.%20The%20cupcakes%20and%20frosting%20are%20so%20light%20and%20airy%20that%20the%20nuts%20provide%20a%20very%20nice%20texture%20contrast.%20You%20could%20toast%20the%20hazelnuts%20or%20even%20use%20macadamia%20nuts.%3C/p%3E%3Cp%3ESo%20I've%20got%20the%20cupcakes%20in%20hand,%20a%20singing%20balloon,%20and%20purple%20calla%20lilies--I'm%20ready%20to%20go.%3C/p%3E%3Cp%3EMy%20Mom%20was%20thrilled%20with%20her%20surprise%20goodies%20at%20work.%20Turns%20out%20my%20sister%20had%20also%20stopped%20by%20earlier.%20:)%20And%20my%20Mom%20had%202%20carrot%20cakes%20(her%20favorite%20cake),%20and%20both%20homemade,%20to%20her%20name%20as%20well.%20Despite%20being%20at%20work,%20it%20was%20a%20good%20birthday.%20:)%3C/p%3E%3Cp%3EHere%20is%20my%20beautiful%20Mommy!%20Happy%20Birthday!!!%3C/p%3E%3Cp%3EAnd%20wishing%20you%20many%20more%20to%20come!!%20xoxoxox%3C/p%3E%3Cp%3E%3C3%20I%20hope%20to%20one%20day%20be%20at%20least%20half%20a%20good%20a%20mom%20and%20person%20as%20she%20is.%20%3C3%3C/p%3E%3Cp%3EThis%20one%20goes%20out%20to%20one%20of%20the%20kindest,%20most%20caring,%20thoughtful%20and%20STRONGEST%20people%20I%20know%20~*~*~*~*~%20Thank%20you%20for%20all%20you%20do%20for%20us.%3C/p%3E){kind=link}
