Receta Happy Halloween……
Halloween is here, and we are even celebrating it in Morocco!!
When we first arrived here we seldom saw decorations for Western holidays such as Halloween, Easter and Christmas, but they seem to be popping up everywhere at the moment and there was quite a good Halloween selection available at a few toy and sweet shops this year. So our house is a frenzy of Halloween preparation, which is not a holiday we traditionally celebrate so it’s all new and exciting especially for the children!
I found this wonderful recipe for pumpkin cupcakes on the Martha Stewart site. I did a trial run over the weekend as I was making them for a Pre-K party today, so needed to be sure they tasted good as you know what fussy palates those little ones can have! Well they were all devoured instantly!
They are absolutely fantastic and make a wonderful change from the standard cupcakes…more like carrot cake, but made with pumpkin. The only alteration I made to the recipe was that as we don’t have tinned pumpkin puree, I simply used the equivalent amount of pumpkin that I had pre-cooked and pureed with a hand blender.
- I served them with a cream cheese frosting made as follows:
- 230g Cream Cheese
- ½ cup soft butter
- 2 cups icing sugar
- 1 tsp vanilla essence
Beat together the cream cheese and butter until creamy. Add the icing sugar and vanilla and beat until smooth.
