Hard Boiled Eggs 3 Ways

With Easter weekend quickly approaching, and 2 kids who love to decorate Easter eggs, it’s not long before I have dozens of hard boiled eggs stock piled in my fridge.
Truth be told, Easter or not, I almost always include hard boiled eggs in my weekend meal prep simply because they are easy to make and a really delicious and convenient protein packed snack. So, I’m always finding fun and delicious ways to eat them and this week I’m sharing three of my favorites with you!

- Eggs on Ezekiel
- 1 piece Ezekiel bread (or your favorite whole grain bread)
- 2 hard boiled eggs, peeled and sliced
- 1 clove of garlic
- 1-2 tsp. extra virgin olive oil
- Handful of watercress or baby spinach
- Salt and pepper to taste
- Toast your bread. Rub garlic clove or warm toasty bread so the garlic melts right tint to he toast. Spread on extra virgin olive oil and then layer with greens and egg. Season with salt and pepper and enjoy!
- Guacamole Stuffed Eggs
- 3 hard boiled eggs, peeled
- 1 small avocado, roughly diced
- 1 tbsp.of lemon juice
- 1 small garlic clove, crushed
- 2 tbsp. chopped scallions
- Salt and pepper to taste
- Slice eggs in half and pop out the yokes (You can save the yolks to add to a salad later into day).
- In a small bowl, combine avocado, lemon juice, garlic, scallion, salt and pepper. Gently mash with the back of a fork until you have a nice creamy, ‘guacamole-like’ texture.
- Scoop avocado into each egg white half and enjoy!
- Garbanzo + Egg Salad
- 1-15 ounce can garbanzo beans, drained and rinsed
- 3 hardboiled eggs, peeled and chopped
- 1/2 cup diced tomato
- 2 tbsp. thinly sliced red onion
- 1 clove minced garlic
- 2 tsp. olive oil
- 1 tbsp. red wine vinegar
- Salt and pepper to taste
Combine all the ingredients in a medium sized bowl. Gently toss and enjoy! (Makes 3 cups of salad).
