Ingredientes

  • 1 c. diced seeded plum tomatoes
  • 2 Tbsp. minced fresh basil
  • 1 1/2 Tbsp. minced pitted Kalamata olives (or possibly other brine-cured black olives)
  • 1 Tbsp. extra-virgin extra virgin olive oil
  • 1 sm garlic clove chopped
  • 8 slc sourdough bread toasted
  • 4 lrg hard-boiled Large eggs peeled, and sliced crosswise
  • 2 c. coarsely-minced arugula - (packed)
  • 8 x wide Parmesan shavings (cut with vegetable peeler)

Direcciones

  1. Mix first 5 ingredients in small bowl. Season salsa to taste with salt and pepper.
  2. Place 4 toast slices on work surface. Top each with 1/4 of salsa, 1/4 of egg slices, 1/2 c. arugula, and 2 cheese shavings. Cover with remaining bread slices. Cut each sandwich in half and serve.
  3. This recipe yields 4 servings.
