%20down%20my%20throat.%20I%20like%20a%20little%20%E2%80%98zazz,%20ya%20know?%20I%20make%20a%20lot%20of%20burritos,%20nachos,%20lasagnes%20%E2%80%93%20the%20texture%20of%20shredded%20or%20melted%20cheese%20is%20a%20huge%20component%20of%20the%20overall%20experience,%20so%20I%20am%20determined%20to%20find%20the%20vegan%20analogue%20and%20turn%20it%20into%20a%20cornerstone%20of%20my%20kitchen.%20This%20was%20the%20first%20recipe%20I%20found%20that%20had%20uniformly%20good%20reviews.%20I%E2%80%99m%20not%20sure%20why,%20to%20be%20honest.%20Maybe%20it%E2%80%99s%20just%20me,%20but%20this%20was%20nothing%20like%20cheese.%20It%20was%20like%20a%20block%20of%20gritty%20tofu.%20Didn%E2%80%99t%20melt,%20didn%E2%80%99t%20shred,%20was%20soggy,%20and%20tasted%20like%E2%80%A6tofu.%20I%20looked%20at%20the%20quality%20of%20my%20ingredients,%20the%20prep%20method,%20and%20the%20final%20result,%20tweaked%20a%20bit,%20and%20tried%20again.%20The%20original%20recipe%20is%20here.%3C/p%3E%3Cp%3EMy%20revised%20ingredient%20list:%3C/p%3E%3Cp%3EFor%20lack%20of%20a%20food%20processor%20I%20used%20a%20hand%20blender%20with%20the%20chopping%20bowl%20attachment%20thingamabob.%20I%E2%80%99ve%20ground%20coffee%20beans%20in%20here%20before%20with%20no%20problem,%20and%20it%20handled%20the%20cashews%20well.%20I%20used%20raw%20cashews%20this%20time%20to%20keep%20some%20of%20the%20stickiness%20and%20chewiness,%20and%20about%2010%20more%20than%20the%20original%20recipe%20called%20for%20as%20the%20first%20batch%20came%20out%20pretty%20thin.%3C/p%3E%3Cp%3EThe%20original%20recipe%20says%20%E2%80%9Conion/garlic%20granules%E2%80%9D.%20I%20have%20never%20seen%20an%20onion%20or%20garlic%20%E2%80%9Cgranule%E2%80%9D,%20so%20I%E2%80%99m%20assuming%20the%20chef%20meant%20%E2%80%9Cpowder%E2%80%9D.%20I%20used%20standard%20garlic%20and%20onion%20powder%20on%20the%20first%20pass,%20so%20this%20time%20I%20chopped%20some%20garlic%20and%20onion%20into%20very%20fine%20pieces,%20put%20them%20in%20a%20dish,%20and%20marked%20the%20dish%20%E2%80%9CGRANULES%20ONLY!%20ALL%20OTHERS%20KEEP%20OUT!%E2%80%9D%20and%20put%20a%20little%20security%20guard%20in%20front%20to%20prevent%20incursion.(ok,%20it%20was%20a%20cashew.%20with%20a%20hat.%20that%20i%20made.)%3C/p%3E%3Cp%3EThe%20mustard%20powder%20became%20Dijon%20mustard%20as%20the%20powder%20is%20so%20foul-smelling%20I%20refuse%20to%20keep%20it%20in%20my%20home.%20I%20have%20never%20been%20a%20mustard%20person,%20ever.%20Lame%20as%20it%20sounds,%20forcing%20myself%20to%20eat%20and%20cook%20with%20mustard%20and%20mustard%20products%20to%20make%20vegan%20cheese%20analogues%20has%20been%20really%20nasty%20for%20me.%20The%20smell,%20the%20flavour%E2%80%A6just%20thinking%20about%20it%20makes%20me%20nauseous.%20Yet,%20never%20let%20it%20be%20said%20I%20wouldn%E2%80%99t%20try!%3C/p%3E%3Cp%3EYou%20will%20recall%20my%20excitement%20about%20agar%20powder,%20which%20I%20finally%20got%20a%20chance%20to%20use%20%E2%80%93%20the%20only%20other%20weirdie%20ingredient%20was%20the%20nutritional%20yeast.%20OK,%20I%20use%20Smilin%E2%80%99%20Old%20Farmer%20Guy%20Bob%20Something%20brand%20yeast,%20and%20I%E2%80%99ve%20come%20to%20the%20end%20of%20a%20package%20and%20want%20to%20try%20something%20else.%20This%20stuff%20was%20flavourless,%20expensive,%20and%20Smiling%20Farmer%20Bob%20creeps%20me%20out.%20So%20I%E2%80%99ll%20be%20looking%20into%20a%20new%20brand,%20but%20for%20now,%20that%E2%80%99s%20what%20I%20used.%20Sorry,%20Bob.%20I'm%20sorry%20you%20had%20to%20find%20out%20this%20way.%3C/p%3E%3Cp%3EIt's%20effortless%20prep:%3C/p%3E%3Cp%3EBoil%20the%20water%20and%20sprinkle%20agar%20agar%20powder%20on%20top.%3C/p%3E%3Cp%3EStir%20and%20simmer%20for%20around%203%20minutes.%3C/p%3E%3Cp%3EPlace%20in%20a%20food%20processor%20together%20with%20the%20remaining%20ingredients.%20Blend%20until%20smooth.%3C/p%3E%3Cp%3EPlace%20in%20a%20mold.%3C/p%3E%3Cp%3EChill%20in%20fridge%20overnight%3C/p%3E%3Cp%3EDoesn't%20get%20easier%20than%20that.%3C/p%3E%3Cp%3EThe%20mixing%20went%20well%20(lot%20more%20watery%20than%20I%20thought%20%E2%80%93%20watch%20out%20for%20spills)%20and%20the%20setting%20as%20well.%20In%20hindsight,%20I%20should%20have%20tried%20to%20get%20all%20those%20bubbles%20out%20before%20I%20let%20it%20set,%20but%20it%20was%20so%20liquidy%20I%20thought%20they%E2%80%99d%20work%20it%20out%20for%20themselves,%20and%20it%20seemed%20like%20a%20private%20matter%20I%20shouldn%E2%80%99t%20get%20involved%20in.%3C/p%3E%3Cp%3EThe%20cheese%20was%20firm,%20came%20out%20of%20the%20mold%20well,%20and%20I%20let%20it%20air-dry%20a%20little%20covered%20in%20a%20thick%20paper%20towel%20to%20try%20to%20get%20the%20condensation%20off.%20After%20an%20hour%20or%20so,%20it%20was%20a%20bit%20more%20dry,%20so%20I%20cut%20a%20chunk%20off%20to%20try,%20being%20sure%20to%20take%20this%20incredibly%20artistic%20(possibly%20award-winning?????)%20photo.%20The%20kids%20today,%20they%20like%20the%20photos%20of%20food.%20Big%20market.%20Denny%20Crane.%3C/p%3E%3Cp%3EVerdict:%20Meh.%20Not%
