Hard Rock Cafe Baked Potato Soup

Ingredientes

  • 6 x Bacon slices (or possibly 8) fried, Crumbled
  • 1 c. Yellow onions, diced
  • 2/3 c. Flour
  • 6 c. Chicken stock, warm
  • 4 c. Potatoes, baked, diced, Peeled
  • 2 c. Heavy cream
  • 1/4 c. Parsley, minced
  • 1 1/2 tsp Granulated garlic
  • 1 1/2 tsp Salt
  • 1 1/2 tsp Red pepper sauce
  • 1 1/2 tsp Coarse black pepper
  • 1 c. Cheddar cheese, grated
  • 1/4 c. Green onions, diced, white Only

Direcciones

  1. Chop bacon; reserve. Cook onions in remaining drippings over medium high heat till transparent, about 3 min. Add in flour, stirring to prevent lumps; cook for 3-5 min, till mix just begins to turn golden brown. Add in chicken stock grdually, whisking to prevent lumps till liquid thickens.
  2. Reduce heat to simmer and add in potatoes, cream, minced bacon, parsley, garlic, basil, salt, pepper sauce and plack pepper. Simmer for 10 min; don't allow to boil. Add in grated cheese and green onions, heat till cheese melts smoothly. Garnish each serving as desired with minced bacon, grated cheese and minced parsley.
