A harvest pie

Last weekend, I bought some apples and pears at the local orchard. The apples were wonderful and we ate most of them raw. But, I had three left over and two pears that really needed used up. My husband LOVES apple pie so I decided to surprise him.

This is what I had to work with.

I know that lemon is the preferred citrus for apple pies, but I only had limes so here it is!

Peel and thinly slice apples and pears. Toss them with the lime juice. In a separate bowl, combine sugar, spices, and flour. Whisk to incorporate. Stir dry ingredients in with the fruit. Add vanilla and melted butter and stir.

I used one crust (which I actually did make from scratch) and made a kind of galette. It may not be the most beautiful pastry, but it is easy and I like the rustic look. (You could definitely use this recipe for a traditional two-crust pie.)

Preheat oven t0 400 degrees. Brush cold water on the top of the pastry and sprinkle with a bit a sugar. Bake for 40-50 minutes (or until crust is brown and fruit is bubbly.)

You can see it bubbled-out a bit and the edges are a little brown and gooey!
