Hash Brown Brunch Casserole

Ingredientes

  • 3 tbsp. veg. oil
  • 1 (2 lb.) bag frzn hash browns
  • 1 onion, minced
  • 1 green pepper, minced
  • 1 c. ham, cubed
  • 10 Large eggs, beaten
  • 1 c. cheddar cheese, shredded
  • Salt and pepper, to taste

Direcciones

  1. Heat oil in skillet. Add in hash browns, onions and green peppers. Cook till potatoes begin to brown. Spray a 9" x 13" pan with vegetable oil spray. Spread potato mix in bottom of pan. Top with ham. Pour Large eggs over all and season with salt and pepper. Gently stir to coat all ingredients with egg. Sprinkle with shredded cheese. Cover with foil and chill overnight. Bake, covered, for 25 min at 375 degrees. Remove foil and bake 5 min longer.
