This is the time of year you will find me eating more pizza then I care to admit if I don’t take a little time to do some simple meal prep on the weekend.
In this video I share some of my go-to tricks for making busy weekday meals a little easier to get on the table.
A few of the tips I share include my Smoothie Starter Kit:
This is an incredibly easy and tasty way to make sure you get in a nutritious breakfast in, even on the craziest mornings. Basically you just take your favorite smoothie combination and add all of the dry ingredients to a freezer baggie ahead of time, this way when the morning comes all you have to do is add the baggie ingredients into your blender along with a cup of almond milk (and any other smoothie fixin’s you like [think protein powder, nut butter, cinnamon, etc.] and breakfast is served.
I call this combo my Green Banana Berry Smoothie. Each baggie includes: 1/2 banana, 1/4 frozen blueberries, 1/4 frozen strawberries, and a big handful of spinach. I usually make 4-6 baggies at a time.
I also share some of my favorite ways to use my beloved crudite (aka bin of chopped raw veggies). I’m not going to share all of them in this post (mostly because my kids are going crazy and I’ve got 10 minutes to finish this up) so be sure to watch the video if you want to see more inspiration. But here are a couple of my favorites:
Turkey + Veggie Roll Ups
All I do is grab some of my raw veggies (in this case carrots ad green beans), layer them on some organic sliced turkey, give it all a squirt of mustard and roll. Such and easy and delicious snack (and great for the kids lunch boxes too).
Quick Veggie Quesadillas
This is my favorite 7 minute dinner (or lunch!). I just grab a handful of raw broccoli and cauliflower from my crudite and give it a quick 2-minute steam in my hand dandy microwave steamer basket (serious life-saver when you are in a time crunch).
Then I warm a sprouted tortilla in a non-stick pan, add a sprinkle of shredded cheese and my veggies and I have veggie quesadillas in under 10 minutes. Amazing.

I’ve shared this recipe with you guys before and it happens to be one of the most popular recipe on my blog. Clearly we all like meatloaf squished into muffin cups!
