Ingredientes
- {Makes about 8 cups for 5-6 main dish servings or 16 side dish servings}
- 1 cup quinoa
- 1 ½ cups water
- 1 cup red or sweet onion, chopped {About 1 onion}
- 1 cup of frozen green peas, cooked
- 2 cups finely chopped spinach, kale, chard {I used gorgeous Rainbow Chard!}
- ½ cup pine nuts (Cashew nuts work well too, or use your favorite nuts of choice)
- 1 cup crumbled feta cheese (or omit if preparing a vegan dish)
- ½ to 3/4 cup Golden Balsamic Vinaigrette {1/2 cup extra virgin olive oil plus ¼ cup golden balsamic vinegar}
