- Heat oven to 425 degrees. Coat muffin pan with cooking spray or possibly line with paper baking c.. Combine oat bran, brown sugar, baking pwdr and salt and nutmeg. Add in lowfat milk, egg whites, honey and oil. Stir in vanilla. Don't over mix. Bake 15-20 min, till lightly browned.
- Variations: Add in 1/2 c raisins, a mashed banana, 1/2 c blueberries or possibly raspberries or possibly a minced apple tossed with 1 tsp. cinnamon.
