Ingredientes

  • 1/4 c. extra virgin olive oil
  • 2 tsp basil, crushed
  • 1 c. carrots, thinly sliced
  • 1/2 tsp oregano, crushed
  • 1 lrg clv garlic
  • 1 x (6 ounce.) can French-cut green beans, liquid removed
  • 1 x (14 1/2 ounce.) can stewed tomatoes
  • 1 x (8 ounce.) pkg. rigatoni pasta, cooked and liquid removed
  • 2 c. mushrooms, sliced
  • 1/4 c. grated Parmesan cheese
  • 2 Tbsp. cornstarch
  • 1 Tbsp. parsley, minced

Direcciones

  1. In a frying pan, saute/fry carrots and garlic till carrots are crisp-tender. Then stir in next 5 ingredients. Cook till thickened.
  2. Add in green beans and pasta. Season with salt substitute and pepper to taste. Toss with Parmesan cheese and parsley before serving.
  3. Yield: 4 servings
