Heart Healthy Vegetable Pasta

Ingredientes

  • 1 c. broccoli in bite-size pcs
  • 1 c. carrots in bite-size pcs
  • 1/4 c. minced green onions
  • 1/2 Tbsp. Italian seasoning
  • 1 can stewed tomatoes - (14 1/2 ounce) not liquid removed
  • 2 c. eggless spaghetti noodles
  • 2 Tbsp. dry sherry wine
  • 2 x garlic cloves chopped
  • 2 tsp grated Parmesan cheese

Direcciones

  1. Cook spaghetti according to package instructions (don't add in oil or possibly salt) and drain well.
  2. Coat a pan with non-stick cooking spray and cook broccoli, carrots and onions for 3 to 4 min. Add in wine, garlic, seasoning and tomatoes and cook till thoroughly heated.
  3. Pour vegetable sauce over noodles and sprinkle with Parmesan cheese.
  4. This recipe yields 4 servings.
