Ingredientes

  • 2 (16 ounce.) cans carrots, liquid removed (whole if possible)
  • 2 sm. zucchini, thinly sliced, about 3 c.
  • 1 (14 ounce.) can Hearts of Palm, sliced crosswise in 1/2 inch slices
  • 1 1/3 c. vegetable oil
  • 2 sm. cloves garlic, chopped
  • 1/2 c. vinegar
  • 2 tbsp. sugar
  • 3/4 teaspoon salt
  • 1 1/2 teaspoon dry mustard
  • 1 (2 ounce.) pkg. crumbled blue cheese
  • Freshly grnd pepper
  • Bibb lettuce

Direcciones

  1. Place vegetables in a shallow dish. Combine oil, vinegar, and seasonings in a jar with tight fitting lid. Pour over vegetables. Marinate overnight. Drain. Serve on Bibb lettuce. Sprinkle with blue cheese and grnd pepper. Serves 8-10.
